a valentine’s day full of joy.

Valentine’s Day. It can be such a cliché, but I don’t care! It’s such a fun day, whether you’re celebrating with your girls or your significant other– live it up 🙂

My valentine’s day started early with a walk around campus, having some ‘me’ time.

After the boy finally woke up and meandered over, I threw together a quick breakfast from random stuff I had in the fridge. Eggs + bacon for him. Bacon, chicken + salad for her.

The morning/afternoon were spent doing homework, getting a workout in, and running to the grocery store for Valentine’s Day supplies!

After some failed appetizers– apparently I do not know how to hard boil eggs– we headed out around campus to snap some photos. We have had this activity on our bucket list for a while, and considering we’re seniors, it was about time! We stopped by the lake, the chapel, the library, and the bell tower, and had a blast!

Then it was time for the main course! First up: the boy came up with this delicious idea: some frozen berries pureed + champagne = bubbly heaven.

For our main course: chicken and vegetable red curry. We actually took on the challenge and made the sauce ourselves (well we used a paste, but it’s still more steps than buying the sauce in a bottle) with coconut milk, and it was yum. I’m lucky my best friend is willing to try new recipes for me! He’s clearly the more domestic one 😉

After dinner, we took a break from eating and built a fort. We used sheets, blankets, candles, and sleeping bags for the full fort effect 🙂

Next up: dessert time! Another recipe my boyfriend was willing to try for his weird ‘healthy’ girlfriend. Paleo molten lava cakes for two from Taylor Made it Paleo. Topped with a little salted caramel ice cream, this was divine.

Life Lately.

Woah y’all! I never expected the week before my birthday to be so busy! I thought this week was going to focus on homework, but I got so swamped with internship work, errands, and other small jobs this week. Luckily I was still able to fit all my work in (it’s a priority, right!?). Unfortunately, I didn’t get to check in here. After doing homework all night, I just wasn’t motivated to come type about my day. But I do have some pictures to share from the week!

1. A delicious brunch out with my NMK. I had a gluten free breakfast bowl with eggs, bacon, cheese, and salsa! Check out Tupelo Honey Cafe if there’s one in your area!

2. Busy days this week meant breakfasts on the go (in order for maximum sleep of course!). Top- an empty jar of Justin’s Chocolate Hazelnut butter, filled with banana, oats, coconut milk, and some roasted nuts. Bottom- some “overnight” (aka 30 min) oats with coconut milk, pumpkin, chia seeds, nuts, and a little Nikki’s Pumpkin Spiced Donut Coconut Butter.

3. Occasionally I wear real clothes. 1- for a big interview: have to wear my orange pants! 2- Church and brunch with the boy!

4. Workouts. Working out is totally my stress relief. This week I kept fit with light cardio and lots of circuit/strength workouts. I am feeling stronger and really excited to be lifting weights again. I want to build some strength and get my muscles pumping!

7. Dates and projects!

1- Frozen Yogurt with my 2 besties since freshman year. We don’t get to hang out as much anymore, but we still have the best times together.

2-Movie night, followed by dinner with the boy! Our little solo birthday celebration for yours truly.

3- A huge gardening project this morning for my internship. We cleaned the plot up, spread topsoil, tilled the whole thing and dug out plots for new raised garden beds. It was a lot of work, but so awesome to get this community garden started. Plus it was an upper body workout I’ll be feeling for days!

8. Presents! My birthday isn’t until tomorrow, but I’ve been lucky enough to get a few early presents! 1: An amazing caramel cake from my parents! It’s not gluten free, but a little splurge is worth it for me! 2: An amazing sterling silver + diamond cross ring from NMK. I am certainly one blessed, lucky, and loved girl!

I Can’t Wait for Summer Y’all!

I was looking at this AWESOME blog Helene In Between today and enjoying her wonderful list of summer things. Considering that today is the first day of spring, in addition to the balmy 65 degree weather here, I thought I would share my own “I Can’t Wait for Summer” List!

1. Going to the beach

I have been a beach baby all my life. I love the sand, the water, the sun, and especially all the different ways to play!

2. Hiking

I love being outdoors, hiking, sitting, taking in the sites! But between the cold weather and the school year, I don’t get out nearly as much as I would like. Summer always allows more time + sunshine for me to enjoy. I love hiking as a fun day with friends, or as time to reflect on my own!

3. Shorts.

I hate pants! Pants are so boring. I love my shorts and I rock them all summer long! I love throwing on some cute shorts and heading out the doors. Also- dresses and skirts. I hate layering up all winter long, and I can’t wait for the freedom of simple outfits where I don’t have to worry about how cold I’ll be.

4. Exploring Greenville and adventuring with my #1 partner in crime

For the first time ever, my boy and I will be in the same place for most of the summer. I can’t wait for all the fun and adventures. We’ll both still be working, but a lot less stressed than during the school year. There are so many adventures we want to have and places we want to explore around Greenville!

The best thing about summer is all the fresh produce! Strawberries, eggplants, peppers, tomatoes..the options are practically endless. There is nothing better than fruits and vegetables straight from a farm!

What I Did This Weekend!

Hey y’all! How was your weekend? Mine seemed to just fly by- isn’t that always the way?

Here’s the short version of my weekend!

Saturday:

On Saturday morning, I woke up early to get started on work and chores for the day. First up, I made some breakfast for myself, and a little later when NMK came over, breakfast for him as well!

While my boy was over, I did a little devotional and shared some prayer time with him. There is no better way to start the day.

Then it was homework time. Physics, Spanish, and MCAT work. Boring stuff, you guys don’t care about that!

A few hours later, I headed over to the dining hall for lunch with my roommate. The options were pretty slim, but I managed to get some good vegetables, some hummus, and a few chips for crunch.

The rest of the afternoon was spent studying. Boring.

I did manage to fit a workout in- 45 minutes of easy steady state on the Elliptical. Perfect for the weekend.

A little bit later, we gathered our Spring Break group to sort out details for the week. Next week is finally our Spring Break, and we’re going to Savannah, but I’ll fill you all in more after I make it through this crazy week!

We had planned to eat at our on-campus restaurant, but when we got there, the line was wrapped around and just horrifying. We ended up back at the good ole Dining Hall. Not my first choice for a Saturday night, but hey- free is free! ^^I ended up with some Moroccan Vegetable Stew and potatoes on the side. Simple and healthy {ish}.

After dinner, I finally took a break from homework and hung out with my boy and our friends for the rest of the night. Simple and fun.

Sunday:

Sunday was pretty much the same as Saturday– filled with homework. So I’ll just hit you guys with the details!

Snow Day!

Wednesday:

Wednesday was our Snow Day over here! It was freeeeeeezing {for us southerners ;)} and the roads were extremely icy. Too many people were hurt on Tuesday night, and I’m glad Furman decided to keep everyone off the roads Wednesday.

I started the day off relaxing in my apartment, and working on some homework. All bundled up, and enjoying the day off. It was actually what I needed to catch up on homework.. fun 😉

^Some breakfast.. at 11:15. I sort of got distracted, and then realized I was starving.. oops. Roasted Red Pepper Tomato Soup, Egg whites + spinach, Udi’s gluten free toast, and Sabra hummus. Veggie filled and delicious breakfast.

^^After some more homework, my bestie/roommate Carolyn and I went on an hour walk around the lake. It was cold, but so refreshing out! We wore 5+ layers each, so we stayed nice and warm on our walk. It felt good to get out and stretch after being stuck inside all morning.^^

For my workout, I headed over to the gym, and pumped out 40 minutes on the arc trainer. It stretches my legs out so well! I love the versatility too- it can be low-intensity cardio or a HIIT workout, depending on the settings.

For dinner, my boy came over and we cooked. All the dining services were closed on campus, and this was a fun alternative. We made quinoa with stir fried vegetables, and chickpeas. All topped with a Red Curry sauce. Too good!! And I got the leftovers 🙂

Thursday

Thursday morning it was back to class, boo! But it was good..too many days off and the work starts piling up, teachers get anxious…

It was a bright and early morning in the lab for me. I am lucky to have my boy working in the same lab as me! But, we keep our relationship on the DL in the lab. It’s not easy, but we don’t want to make it weird.

We walked over to lab at 8:30, and almost froze on the way there. It’s about a 1 mile walk, and just long enough to chap my cheeks and freeze my ears. Oh the joys of winter…

^^In lab, we marked up NMK and ran some tests on him. Good practice. He was such a good sport- we had to shave his legs around the EMG test sites, and scrub the dead skin off {not a pleasant process}. Such a champ^^

^^After finally escaping the lab, I grabbed some Dining Hall lunch with the boy and some friends. Then it was off to the gym for me, and another Arc workout. It’s my favorite cross training these days! I really can’t wait to run my half, so I can start strength training more again. It’s so hard right now, because my legs are  tired on the days I’m not running, that I don’t want to tire them out more with weights. Vicious cycle!^^

^^my most exciting eat of the day– 3.2.1. mug cake. 3 tablespoons of Bobs Red Mill Gluten Free Chocolate Cake Mix, 2 tablespoons of water, 1 minute in the microwave. Easy and delicious. I topped mine with a mashed banana for some “icing”. It was such a yummy and easy treat. Plus, I didn’t have to worry about the entire cake sitting around, taunting me…^^

Hey y’all! It’s been a few days! Things are crazy here. For the South at least. It started Tuesday afternoon, with snow, then a snow day Wednesday, and now..it’s Thursday morning and a balmy 17 degrees out. Oof! This New York girl has gone week, and this weather is too cold for me! Anywho.. let’s back up and recap the past few days.

Monday

Monday was pretty straight forward– these are the highlights.

Later Monday night, I chilled with the boys and watched some Game of Thrones.. not the hugest fan so far! Although they did start me on episode 9, so there was a lot of confusion and catching up.

Tuesday:

Tuesday began normally enough- greek yogurt, banana, and gf flakes for breakfast {a staple lately…}. Following breakfast, I worked on setting up my new Armour39 Heart Rate Monitor.. can’t wait to tell y’all about it!

^I got my workout done early, because there were rumors of snow, and I wanted to workout before the gym closed! I was decked out in Under Armour from head to toe, except for my favorite Brooks running shoes! I had to capture it. Also, I don’t know how to color coordinate…especially with workout clothes. Don’t judge.^

^3 mile run. 9 min pace. Not speedy for you racers out there, but speedy for a novice like me! I do most of my runs at a 9:40-10:00 pace, so it felt awesome to really push myself and rock it for a shorter run. I think I’m going to start doing “faster” runs on Tuesdays and then slower on Thursdays to save up for my long run on Saturday. Unless I’m doing my long run on Sunday. So, we’ll see.^

^26 more minutes on the Elliptical… time I was waiting for the boy to come pick me up, so I didn’t have to walk outside in the freezing/snowy weather.^

Lunch was eaten dining hall style with my roommates and the boy. Salad, and chips + hummus. Simple, delicious.

Around 3:30, we all received a text message that campus would be closing at 5 pm, due to inclement weather. At this point it was already snowing, but very lightly. So the boy ordered a pizza for himself and his roomies {because the dining services were all going to close..} and we drove to pick it up. So scary! The roads were insane, people sliding everywhere, and accidents every mile. I am so thankful that Nathan has 4 wheel drive and we were alright. I was shocked though, and am praying for the people who were in accidents, injured, or affected in any way by the storm. The south is just not prepared for this kind of thing.

I doodled around my apartment for a while, doing some ‘homework’ aka watching TV and playing on Pinterest. Finally, at 9:30, we received a text that classes were cancelled for Wednesday. Snow day!!! My first full one in 3 years at Furman.

On Friday morning, I woke up 2 hours before class and studied/finished up some last minute homework. It’s nice to have a 9:30 class because it’s just late enough that I can have 30 min-1 hour {depending on when I wake up} to cook, blog, or do any homework I haven’t finished.

^Lunch was eaten in the Dining Hall– salad, followed by some fruit, greek yogurt and cereal. It was pretty delicious, especially because I was starving by the time I ate it. I think I need to get some bigger breakfasts in..^

My afternoon was toiled away in the Research Lab, working on our video, and learning how to use all the fancy lab tools. I am so excited to start our real research this coming week!

After finishing up in the lab, I headed over to the gym for a quick workout- 35 minutes on the Arc Trainer and 20 on the Elliptical

A quick shower and change later, and we were all off to dinner. My roommate’s boyfriend is in town so a whole group on us went out to Whole Foods and noshed hard on their salad bar. I love getting anything I want– I usually get a bite of almost everything- how could you resist?

Saturday:

On Saturday morning, I woke up much earlier than I had planned, but I just rolled with it. I worked on emails and such for a while, before putting on some Downton Abbey and starting breakfast.

^I made pancakes for myself and the boy. Whole wheat. It was a little experiment for my gluten free life. The boy has been reading some things about how processed gluten is what really usually bothers people , as opposed to more natural foods like whole wheat flour, or just the plain grains. I used whole wheat flour, and ate a couple of them. I didn’t feel too bad afterward, but I don’t know if I necessarily felt amazing.^

A little homework, and some cleaning, then it was off to the gym for the 10 mile run! I usually do my long runs on Sundays, but I wanted to get it done for the weekend, especially because I have a lot of homework that I need to be working on today.

Unfortunately, because of the cold {freezing} weather I had to run inside. Ugh! I plan to do most of my runs outside for the last month of training, but I just hope it warms up a bit! I stopped about halfway to refill my water, and go to the bathroom. Then restarted for the rest of the run. I wasn’t running fast by any means. It’s so odd to me how one run can be great {like my 9.5 last weekend}

My amazing boyfriend showed up and ended up running the last 2.5 miles next to me. It was such a treat, and great encouragement to have him there smiling, and telling me that I could do it! I was also texting my mom the entire time.. she always makes me feel better!

After my run, I headed back and ate a banana, and chugged lots of water. I did laundry, and then proceeded to lay on my bed until I began to feel nauseous. I realized that I hadn’t really refueled after my run, and that was probably why. I drank some water + Nuun and ate another banana + some trail mix. After laying down a little more, I felt much better. I’m upset with myself that I didn’t refuel better!

The rest of the evening was Mexican food {I had tilapia, and LOTS of chips + salsa, plus the rice + beans from NMK’s fajitas. Score!}, and then hanging and playing games with the friends. We played Head’s Up {Ellen Degeneres’ App!} and then just talked. I headed to bed around midnight.

 

Weekend Warrior.

So I’m not entirely sure, but I think at college people use the term ‘weekend warrior’ for people who study hard during the week, but go hard on the weekends. I enjoy hanging out with friends on the weekends…but I’m definitely not someone who ‘goes hard‘. My version of weekend warrior is… working out, getting food prep done for the week, and cleaning the mess I’ve made during the week. Some may call me crazy ;). I do also enjoy using the weekends to catch up with friends who I don’t see during the week.

Saturday

On Saturday morning, I woke up super early- like 6 am early. I don’t know why but.. I felt really well rested, so I just rolled with it. No one else in my apartment was awake yet, so I chilled on the couch for a while, {ok I was on pinterest} before moving our table out of the way and doing a quick 10 minute circuit. It felt good to get in some movement first thing in the morning. And even better to not have to go outside to do it! I watched some Kardashians while doing my workout/chilling. Guilty pleasure TV.

^A little bit later, I sipped on some Trader Joe’s Roasted Red Pepper Tomato Soup. Kind of weird breakfast choice..but it was a nice way to get some vegetables in first thing!^

After the soup, I roasted some spaghetti squash and some sweet potatoes, before whipping up some Gluten Free Banana Bread {recipe to come!}. I obviously proceeded to snack on some of that before putting it in the fridge {so I didn’t inevitably finish off the entire thing}.

After organizing my room and doing some laundry, I ran out to grab groceries for the week + grab some decorations from TJ Maxx. I spent more than planned, but it is so fun to add cute items to our apartment! After the errands, I headed over to the gym for a little workout. I didn’t want to do anything crazy because I knew I had a long run on Sunday, and my legs were still a little sore from my circuit workout Friday. I did 50 minutes on the Arc Trainer. Have to keep that endurance up for my long runs! #halfmarathonhereIcome

After the workout, I showered, changed, and threw together a quick dinner. Spaghetti squash, green pepper, hummus, tomato sauce, and tilapia. Quick + easy. I threw an apple in my bag and ran out to go babysit.

Babysitting was so much fun. Most people at school are busy with Greek Recruitment this weekend, but I was free! My roommates are all independents as well, so we were still able to have some fun. Anyway, babysitting was great. This little nugget was too cute, and we played kitchen, matching games, and danced for a couple of hours. I put her to bed around 9 and had an hour to chill by myself before her parents came home. I don’t really love being alone in someone else’s house {hello– creepy?!} but Pinterest and Netflix kept me happy and distracted :).

After babysitting, I spent the rest of the night hanging out with my boy. We just chatted and he tried to roll a knot out of my leg! So painful but awesome- definitely helped for my run! We also snacked on some Brie and hummus. I love me some cheese.

Sunday:

Sunday morning, the boy and I headed off to church together. Church wasn’t until 11, so I had planned on getting some work done beforehand. Instead, I slept in until 9:30 and then got ready for church. Between getting ready and leaving early to get there {and pick up the boy} I didn’t have time for much breakfast, so I just grabbed a slice of my GF banana bread, and headed out the door.

By the time we got out of church at 12:30, I was pretty hungry and NMK was getting super hungry. It was real. {I kid.} We tried to go to Everyday Organic, my favorite local restaurant but they were all full, and we were not in the mood to wait. Since it was 1 pm by this time, we decided lunch fare would be acceptable. Thai food it was! I got some Red Curry with rice, which turned out to be awesome fuel for my long run!

After digesting and cleaning for about an hour, I headed over to the gym for my run. I try to run outside as often as possible, but I just wasn’t prepared for it yesterday. I don’t know.. I have to be in the right mental place- you know? I did my 9.5 miles, without stopping, and in a 9:40+ pace. I know– I’m not fast! But it felt great to get through, and I was speedy for me! I aim to finish my long runs under 10 min/mile. Nothing too crazy or ambitious for my first half! The run felt awesome, and I was so so happy! The middle miles were definitely a little boring, but I never felt like I needed to die. That’s a win!

After the run, I showered and cleaned up our apartment some. I also CHUGGED water. I filled three bottles and told myself to finish them before doing anything else. I wanted to make sure I hydrated. It makes such a difference in how I feel the next day, and I am definitely thankful for that today. I also had some greek yogurt mixed with protein powder. My muscles need that protein!

After resting for a while, my friend Sarah came over to join my roommates and I for a fun Girls’ Night! We had hummus, brie, goat cheese, guacamole, chips, crackers, and salsa. Tapas, delicious style. After chatting, painting our nails, and chowing down, we flipped on Revenge. I love love love Revenge. It is taking some crazy twists and turns this season- y’all should check it out! I am so sad it won’t be back on till March. At least I’ll have the Olympics to distract me.

A little later, we split some Half Baked ice cream from Ben & Jerry’s. It was amazing. Perfect treat after that long run!

Tuesday, I was lucky to have a free day- no classes. Especially now, at the beginning of the semester, this was a real treat! I didn’t have much work to do, but I did have a number of errands and organizing things to deal with.

I started my morning around 8 {my roommate had to go to an 8:30 so… I woke up. It happens.} I read a little and played around, before making some breakfast. Another similar bowl- banana, greek yogurt, and gluten free cereal. With some peanut butter this time, to make it a little more lasting.

After breakfast, I went for a quick workout, after stopping by the Post Office. Oh, the perks of living on a campus- everything is so close together.

 ^My workout was the biking around campus + two 20 minute stints on the Arc Trainer. I love it, and I feel like I can challenge myself when I do use it. I love a good leg burning workout.^

After the workout I showered, threw on some clothes quickly, and headed off for a date with my boy. It took me a long time to find the right place, but I finally did. We went to Saffron, an Indian Restaurant, which features a buffet for lunch. I had lots of amazing food, none of which I can tell you the names.. I’m not quite Indian-versed enough for that yet. It hit the spot! I have been craving Indian food all winter and finally satisfied that with a simple and healthy meal!

My afternoon was spent doing some homework, meeting up with friends, and having an important talk to my boyfriend. Just being with friends can be the best thing in the world.

^Dinner, later in the Dining Hall. Salad with hummus and quinoa. Followed by a banana and peanut butter +chocolate chips. A dessert that doesn’t break the belt ;).^

After dinner, I went off for a Bible Study with some great girls. We just caught up, chatted, and planned out our study for the semester. Nothing better than fellowship with Christian girls!

The good, the delicious, and the run.

Yesterday was my first day back to classes. Things were a little hectic, with the boy arriving so late the night before//the fact that I’m a terrible unpacker…. But it was all ok. Just a messy room…which I’ll deal with sometime this week.. I hope.

Anyway- I woke up around 8 to get dressed and ready for 9:30 am class. Before heading off to class, I threw together some gluten free cereal, greek yogurt, and a banana. It was scrumptious. One of my roommates locked herself out of her room 😦 so I gave her shoes, a sweatshirt, and my car to go get the RA and unlock her room. It lucked out for me because I got a ride to class 🙂 {which is a mile walk from my apartment…and I was running late!}.

After class, I walked back to my apartment and organized a little bit before making some lunch. Tilapia, pearl onions, carrots, and hummus on the side. Plus some delicious Glutino pretzels. Simple and fast lunch. Enjoyed in excellent company.

After lunch, I headed off to class- Spanish Literature. Should be interesting. Spanish is my major and I love the language. All languages in fact, it’s just amazing to learn the different ways that people communicate/have communicated throughout time. Plus, my roommate is in the class which always makes it fun!

After that class, I headed off to the Health Sciences lab, where I am doing an Independent Study/Research class this semester. I’ll be looking at rehabilitation in Stroke victims. It’s going to be a very interesting study!

^After lab, it was time for a much needed snack + coffee. I had to fuel up before my long run. I a new Kind bar {new to me at least}- Almonds and Apricots in Yogurt. I loved it, and will definitely be trying this one again! I am always in love with Kind’s flavors, and I can’t wait to try more of them.

The Run:

This run was not one of my better runs. I’m sure it had a lot to do with not sleeping much the day before, and being dehydrated from traveling. Oh well right? They can’t all be great runs. I wish I had run outside, but the weather was gross/rainy and just not worth it!

^After the run, my amazing roommate Carolyn picked my up so I didn’t have to make the 1 mile walk back to our apartment.^

A quick shower later, we headed off to the Dining Hall for a quick dinner. I went with a salad– featuring feta cheese, artichoke hearts, carrots, romaine, spinach, alfalfa sprouts, and hummus. Plus corn chips for a little crisp. After dinner I grabbed a mini-cup of Rice Chex and chocolate chips as a treat.

The rest of the of the evening was spent catching up on emails while celebrating Juan-uary! Juan Pablo is adorable and so fun to watch! The Bachelor definitely isn’t a quality show…but if I’m going to watch trashy TV I love me some Bachelor. Especially a Latino man with a precious daughter!
