What I Did This Weekend!

Hey y’all! How was your weekend? Mine seemed to just fly by- isn’t that always the way?

Here’s the short version of my weekend!

Saturday:

On Saturday morning, I woke up early to get started on work and chores for the day. First up, I made some breakfast for myself, and a little later when NMK came over, breakfast for him as well!

While my boy was over, I did a little devotional and shared some prayer time with him. There is no better way to start the day.

Then it was homework time. Physics, Spanish, and MCAT work. Boring stuff, you guys don’t care about that!

A few hours later, I headed over to the dining hall for lunch with my roommate. The options were pretty slim, but I managed to get some good vegetables, some hummus, and a few chips for crunch.

The rest of the afternoon was spent studying. Boring.

I did manage to fit a workout in- 45 minutes of easy steady state on the Elliptical. Perfect for the weekend.

A little bit later, we gathered our Spring Break group to sort out details for the week. Next week is finally our Spring Break, and we’re going to Savannah, but I’ll fill you all in more after I make it through this crazy week!

We had planned to eat at our on-campus restaurant, but when we got there, the line was wrapped around and just horrifying. We ended up back at the good ole Dining Hall. Not my first choice for a Saturday night, but hey- free is free! ^^I ended up with some Moroccan Vegetable Stew and potatoes on the side. Simple and healthy {ish}.

After dinner, I finally took a break from homework and hung out with my boy and our friends for the rest of the night. Simple and fun.

Sunday:

Sunday was pretty much the same as Saturday– filled with homework. So I’ll just hit you guys with the details!

^^Workout– another 45 minutes on the Arc but this time it was a HIIT workout. And it nearly killed me. But in the best way ;)^^

^^A healthy dinner to round out the night, whilst watching the Oscars with my roommates. Sweet potatoes, asparagus, Sole fillet, hummus, artichoke hearts, green peppers, and onions. I spoil myself!^

Recovering and poor decisions.

I cannot believe it is already Friday! This week has been insane. I flew back in on Monday, and literally went straight to class. My roommate picked me up from the airport and dropped me off just in time for my 12:30 class. It’s been a lot of catching up these past few days, but that’s the price for an amazing weekend in Florida.

Here’s what I’ve been up to!

Eats:

This Tuesday, I started a Virgin Diet-esque approach. I have still been having some stomach issues, despite dropping gluten. The biggest thing was feeling stuffed and bloated after only having a small meal– no fun. My mom’s friend suggested I try this approach- dropping some other highly reactive foods {like eggs, soy, dairy +4 more}. After leaving them out of my diet for a while {the Virgin Diet is 21 days, but I am probably going to try it for about 10 days} you reintroduce the different food groups, one at a time, so you can figure out what you’re really reacting to.

Workouts:

On Monday I travelled back from Florida. My legs were ridiculously sore from the half marathon, and I honestly could barely walk. That night, when I had some free time, I stretched for a while and went for a 30 minute walk. It hurt but it also felt good to move around and get some blood circulating through my legs.

On Tuesday I was still sore, but not terribly. One of the most exciting things (in my opinion) about being done with half marathon training is that I have more time/energy now to focus on strength training. I did an upper body workout {based off of Meg’s} and a 25 minute session on the Elliptical.

Wednesday I went for a 1 mile run, followed by 30 minutes on the Elliptical. I then completed a 20 minute leg workout {based off of this program}. It was awesome. Let’s just say- today is Friday and my legs are still sore. Poor decision.

Thursday I was resting from leg day, so I stuck with an easy 30 minutes of cardio. Later in the afternoon NMK and I went on a nice walk as well!

^^Working in the lab sometimes means running tests on yourself. This one was particularly painful- you shave the area + scrub it to get the dead skin off + then wipe down with an alcohol wipe. All in the name of science.^^

Sorry for the MIA this week! Yesterday I had my first Physics test of the semester, so I have been studying away all week. Have to keep my priorities in line during the semester, and unfortunately, blogging gets pushed down the list when school work/tests are piling up!

Anyway, here are some pictures since I’ve been absent!

^^treats! I made some awesome Almond Butter brownies from Paleo Grub. They are addicting and delicious. And paleo {aka gluten/grain/refined sugar free!}. Try them. You’ll thank me.^^

Workouts:

Tuesday- 2 mile run outside + BodyFit class +25 minute cardio {to do my Armour39 Assesment! plus a little extra.}

Wednesday- 30 minute Arc + 10 minute Elliptical.

Thursday- 25 minute run + 20 minute Arc workout.

Friday- Walk with the boy + 35 minute Arc HIIT workout.

TODAY- 12 miles … I’m procrastinating. It’s just a run but… nerves get the best of me!

Wednesday, Workday.

Yesterday was a pretty insane day for me. I woke up around 6:45 to get things started. My morning included some reading, getting ready, plenty of coffee {my true love}, driving the boy to his class, and then eating breakfast before heading to my first class of the day.

It was colder yesterday morning than it’s been since I got back to Greenville. 28 degrees when I was walking to class. And even colder this morning… I have become such a baby… but when I’m home in NY I’m more mentally prepared for the cold. Here in Greenville, I walk out of my apartment expecting at least 45 every morning… and when it’s colder than that, it’s just a total shock to my system.

I bundled up to the best of my Southern abilities. I also had about 40 pounds of ish weighing me down. I wasn’t going back to my apartment until ~930 pm {12 hours later} and I needed workout clothes, lots of books, sneakers, etc…

Despite the cold, the walk was still beautiful. I am so lucky to go to a gorgeous school, and I need to take more time to appreciate it.

^I met a friend for lunch in the dining hall. Salad bar with a side of veggies, salsa, and hummus. I pretty much get a salad every time I’m in the dining hall. What can I say- I’m a veggie girl.^

Workout:

For a simple workout, I did 30 minutes on the Arc followed by 15 minutes incline walking on the treadmill. My little legs were still pretty sore from my runs this week, and I didn’t want to push it too hard.

For dinner, I met a friend at The Paddock, our on-campus restaurant. It just opened this year, and is surprisingly good. Not exactly restaurant quality, but still a step up from the Dining Hall. I had a southwestern style black bean burger– which meant salsa and guacamole. Yum! I got fries on the side…so bad, but so good! I wanted to make sure I ate a big enough dinner, because after this meal, we had to head off to a 3 hour MCAT prep class. It was the first one, and I’ll be going to these every Monday and Wednesday night. It’s going to be rough, but I need rough to make sure I’m prepared for the MCAT exam in May.

After the class, I was mentally drained and not in the mood to do more homework. I met up with my boy and some friends, and we all went out to get frozen yogurt together. I had pancakes and syrup with some cake batter. Topped with maple nut clusters, cookie dough bites, and some chocolate chips/pieces. It was so so good. I got a little else yogurt than I normally do because I was really feeling the toppings!

One last day//Back to School.

Saturday was my last day home, and mostly spent with family. I woke up late, and just in time to head off to brunch with my mom and my best friend Krista. We went to Toast, a local restaurant with delicious, unique, amazing food! I had a Downport Omelette with egg whites which had gouda cheese, peppers, tomatoes, and  crab meat. It was amazing. I am loving seafood more and more. I might be branching out to more meats soon– like turkey or chicken!

I spent the morning/afternoon just hanging out with my parents and enjoying our time together.

A little later in the afternoon, my mama wanted to take a nap, and my dad needed to run some errands. So I headed off for a quick workout, and to use the last day of my gym pass! I hopped on the arc for a simple workout, 50 minutes of cardio.

After my workout, I headed home and cooked dinner with the fam. Salmon, blue corn chips, roasted carrots, asparagus, butternut squash, and hummus. So good. And so satisfying!

The rest of the evening was spent organizing whatever things I left in my room, while hanging with my mom and ad. It was such a perfect way to end my break. I love being home, and I love my family so much!

Sunday:

Sunday morning started early. My dad and I had to leave the house at 4:30 am to get to the airport early enough for my 6:10 am flight. Getting through security was kind of a hassle, because they opened my bag and took everything out! Obviously there was nothing in there, so it was fine, and in the end I am glad to know that they are doing their jobs! My first flight was on the tiniest little plane- we actually had to walk out to the plane and up its little stairs. Fun experience!

Around 7:45 am, I arrived in Washington D.C., and had 2 hours to kill before my connecting flight. I was practically ready to eat my phone by this point, so I headed off in search of some more socially-acceptable food. I ended up with some plain Chobani yogurt, and a packet of Keenwah granola. I had never heard of Keenwah before, but I am so glad I found it. It is a gluten free granola, made from quinoa. It was the perfect addition to my yogurt! It can be hard to find gluten free foods on the go, and it was awesome to run into this. Check out Keenwah for some delicious treats!

My lovely roommate picked me up from the airport and I took her out to lunch as a thank you. We went to Everyday Organic, a local favorite of mine. I had a TLT {Tempeh-Lettuce-Tomato} on spelt bread, which is low-gluten. It was amazing, as per the usual.  If you’re in Upstate SC, definitely check it out!

The rest of the afternoon was spent catching up with the roommates, unpacking, and even a workout. After unpacking for a few hours, I was practically going stir-crazy, so I though a workout was in order.

I had dinner and caught up with some friends, before heading out to the airport to pick up the boy. It is great to be back and I am excited to see what this semester brings!

So…as promised, regularly scheduled posting is back in action. Here’s the last few days in review.

Thursday:

Thursday was another day of babysitting. The amazing + wonderful thing about my little kiddies is that they love love love to be outside and moving around. I hate to be cooped up inside, PLUS I really believe spending time playing outdoors is one of the best things you can do for/with children {in my NOT expert opinion}. We go for walks, play soccer, draw with chalk, and just talk. It’s deathly hot outside, but hey, at least they enjoy it!

Workout Thursday was- 1 mile {each way} jog to the gym. 25 minutes of biking, and of course… babysitting.

Friday:

^breakfast- greek yogurt, banana, and muesli from Trader Joe’s. It’s been my go to breakfast all week. Topped with a little honey? It’s divine.^

^after classes I headed to the Lazy Goat with Krista. We split some pimento cheese as an apetizer- the chunks of roasted red pepper were the perfect compliment. For my meal I had vegetable kebab on a bed of cous cous and tabouleh. Our waiter was so nice and helped me piece some things together to come up with a vegetarian lunch that was satisfying and delighting for my tastebuds.^

^rounded the meal out with some french press coffee. I find french press so much smoother than normal coffee. It goes down particularly well.^

In the afternoon I worked out- keeping it simple with 60 minutes of the Arc trainer. I definitely felt the burn!

^after a dinner out with a friend’s mom, we headed downtown for  the first party {official party} of the school year. It was hosted in Liberty Tap Room. It was ridiculous. We were all hot and sweaty, which basically means we had a fantastic time and danced the night away.^
