What I Did This Weekend!

Hey y’all! How was your weekend? Mine seemed to just fly by- isn’t that always the way?

Here’s the short version of my weekend!

Saturday:

On Saturday morning, I woke up early to get started on work and chores for the day. First up, I made some breakfast for myself, and a little later when NMK came over, breakfast for him as well!

While my boy was over, I did a little devotional and shared some prayer time with him. There is no better way to start the day.

Then it was homework time. Physics, Spanish, and MCAT work. Boring stuff, you guys don’t care about that!

A few hours later, I headed over to the dining hall for lunch with my roommate. The options were pretty slim, but I managed to get some good vegetables, some hummus, and a few chips for crunch.

The rest of the afternoon was spent studying. Boring.

I did manage to fit a workout in- 45 minutes of easy steady state on the Elliptical. Perfect for the weekend.

A little bit later, we gathered our Spring Break group to sort out details for the week. Next week is finally our Spring Break, and we’re going to Savannah, but I’ll fill you all in more after I make it through this crazy week!

We had planned to eat at our on-campus restaurant, but when we got there, the line was wrapped around and just horrifying. We ended up back at the good ole Dining Hall. Not my first choice for a Saturday night, but hey- free is free! ^^I ended up with some Moroccan Vegetable Stew and potatoes on the side. Simple and healthy {ish}.

After dinner, I finally took a break from homework and hung out with my boy and our friends for the rest of the night. Simple and fun.

Sunday:

Sunday was pretty much the same as Saturday– filled with homework. So I’ll just hit you guys with the details!

Recovering and poor decisions.

I cannot believe it is already Friday! This week has been insane. I flew back in on Monday, and literally went straight to class. My roommate picked me up from the airport and dropped me off just in time for my 12:30 class. It’s been a lot of catching up these past few days, but that’s the price for an amazing weekend in Florida.

Here’s what I’ve been up to!

Eats:

This Tuesday, I started a Virgin Diet-esque approach. I have still been having some stomach issues, despite dropping gluten. The biggest thing was feeling stuffed and bloated after only having a small meal– no fun. My mom’s friend suggested I try this approach- dropping some other highly reactive foods {like eggs, soy, dairy +4 more}. After leaving them out of my diet for a while {the Virgin Diet is 21 days, but I am probably going to try it for about 10 days} you reintroduce the different food groups, one at a time, so you can figure out what you’re really reacting to.

Workouts:

On Monday I travelled back from Florida. My legs were ridiculously sore from the half marathon, and I honestly could barely walk. That night, when I had some free time, I stretched for a while and went for a 30 minute walk. It hurt but it also felt good to move around and get some blood circulating through my legs.

On Tuesday I was still sore, but not terribly. One of the most exciting things (in my opinion) about being done with half marathon training is that I have more time/energy now to focus on strength training. I did an upper body workout {based off of Meg’s} and a 25 minute session on the Elliptical.

Wednesday I went for a 1 mile run, followed by 30 minutes on the Elliptical. I then completed a 20 minute leg workout {based off of this program}. It was awesome. Let’s just say- today is Friday and my legs are still sore. Poor decision.

Thursday I was resting from leg day, so I stuck with an easy 30 minutes of cardio. Later in the afternoon NMK and I went on a nice walk as well!

^^Working in the lab sometimes means running tests on yourself. This one was particularly painful- you shave the area + scrub it to get the dead skin off + then wipe down with an alcohol wipe. All in the name of science.^^

Sorry for the MIA this week! Yesterday I had my first Physics test of the semester, so I have been studying away all week. Have to keep my priorities in line during the semester, and unfortunately, blogging gets pushed down the list when school work/tests are piling up!

Workouts:

Tuesday- 2 mile run outside + BodyFit class +25 minute cardio {to do my Armour39 Assesment! plus a little extra.}

Wednesday- 30 minute Arc + 10 minute Elliptical.

Thursday- 25 minute run + 20 minute Arc workout.

Friday- Walk with the boy + 35 minute Arc HIIT workout.

TODAY- 12 miles … I’m procrastinating. It’s just a run but… nerves get the best of me!

Hey y’all! It’s been a few days! Things are crazy here. For the South at least. It started Tuesday afternoon, with snow, then a snow day Wednesday, and now..it’s Thursday morning and a balmy 17 degrees out. Oof! This New York girl has gone week, and this weather is too cold for me! Anywho.. let’s back up and recap the past few days.

Monday

Monday was pretty straight forward– these are the highlights.

^My workout was a 30 minute Arc HIIT, and 10 minutes on the bike to cool down.^

Later Monday night, I chilled with the boys and watched some Game of Thrones.. not the hugest fan so far! Although they did start me on episode 9, so there was a lot of confusion and catching up.

Tuesday:

Tuesday began normally enough- greek yogurt, banana, and gf flakes for breakfast {a staple lately…}. Following breakfast, I worked on setting up my new Armour39 Heart Rate Monitor.. can’t wait to tell y’all about it!

^I got my workout done early, because there were rumors of snow, and I wanted to workout before the gym closed! I was decked out in Under Armour from head to toe, except for my favorite Brooks running shoes! I had to capture it. Also, I don’t know how to color coordinate…especially with workout clothes. Don’t judge.^

^3 mile run. 9 min pace. Not speedy for you racers out there, but speedy for a novice like me! I do most of my runs at a 9:40-10:00 pace, so it felt awesome to really push myself and rock it for a shorter run. I think I’m going to start doing “faster” runs on Tuesdays and then slower on Thursdays to save up for my long run on Saturday. Unless I’m doing my long run on Sunday. So, we’ll see.^

^26 more minutes on the Elliptical… time I was waiting for the boy to come pick me up, so I didn’t have to walk outside in the freezing/snowy weather.^

Lunch was eaten dining hall style with my roommates and the boy. Salad, and chips + hummus. Simple, delicious.

Around 3:30, we all received a text message that campus would be closing at 5 pm, due to inclement weather. At this point it was already snowing, but very lightly. So the boy ordered a pizza for himself and his roomies {because the dining services were all going to close..} and we drove to pick it up. So scary! The roads were insane, people sliding everywhere, and accidents every mile. I am so thankful that Nathan has 4 wheel drive and we were alright. I was shocked though, and am praying for the people who were in accidents, injured, or affected in any way by the storm. The south is just not prepared for this kind of thing.

I doodled around my apartment for a while, doing some ‘homework’ aka watching TV and playing on Pinterest. Finally, at 9:30, we received a text that classes were cancelled for Wednesday. Snow day!!! My first full one in 3 years at Furman.

On Friday morning, I woke up 2 hours before class and studied/finished up some last minute homework. It’s nice to have a 9:30 class because it’s just late enough that I can have 30 min-1 hour {depending on when I wake up} to cook, blog, or do any homework I haven’t finished.

^Lunch was eaten in the Dining Hall– salad, followed by some fruit, greek yogurt and cereal. It was pretty delicious, especially because I was starving by the time I ate it. I think I need to get some bigger breakfasts in..^

My afternoon was toiled away in the Research Lab, working on our video, and learning how to use all the fancy lab tools. I am so excited to start our real research this coming week!

After finishing up in the lab, I headed over to the gym for a quick workout- 35 minutes on the Arc Trainer and 20 on the Elliptical

A quick shower and change later, and we were all off to dinner. My roommate’s boyfriend is in town so a whole group on us went out to Whole Foods and noshed hard on their salad bar. I love getting anything I want– I usually get a bite of almost everything- how could you resist?

Saturday:

On Saturday morning, I woke up much earlier than I had planned, but I just rolled with it. I worked on emails and such for a while, before putting on some Downton Abbey and starting breakfast.

^I made pancakes for myself and the boy. Whole wheat. It was a little experiment for my gluten free life. The boy has been reading some things about how processed gluten is what really usually bothers people , as opposed to more natural foods like whole wheat flour, or just the plain grains. I used whole wheat flour, and ate a couple of them. I didn’t feel too bad afterward, but I don’t know if I necessarily felt amazing.^

A little homework, and some cleaning, then it was off to the gym for the 10 mile run! I usually do my long runs on Sundays, but I wanted to get it done for the weekend, especially because I have a lot of homework that I need to be working on today.

Unfortunately, because of the cold {freezing} weather I had to run inside. Ugh! I plan to do most of my runs outside for the last month of training, but I just hope it warms up a bit! I stopped about halfway to refill my water, and go to the bathroom. Then restarted for the rest of the run. I wasn’t running fast by any means. It’s so odd to me how one run can be great {like my 9.5 last weekend}

My amazing boyfriend showed up and ended up running the last 2.5 miles next to me. It was such a treat, and great encouragement to have him there smiling, and telling me that I could do it! I was also texting my mom the entire time.. she always makes me feel better!

After my run, I headed back and ate a banana, and chugged lots of water. I did laundry, and then proceeded to lay on my bed until I began to feel nauseous. I realized that I hadn’t really refueled after my run, and that was probably why. I drank some water + Nuun and ate another banana + some trail mix. After laying down a little more, I felt much better. I’m upset with myself that I didn’t refuel better!

The rest of the evening was Mexican food {I had tilapia, and LOTS of chips + salsa, plus the rice + beans from NMK’s fajitas. Score!}, and then hanging and playing games with the friends. We played Head’s Up {Ellen Degeneres’ App!} and then just talked. I headed to bed around midnight.

 

Busy, hectic, fun!

Monday:

On Monday we were lucky to have off from class for MLK day. It was such a treat. A lot of girls at Furman are rushing right now, so my roommates and I decided to host a brunch for all our independent friends. It turned out so well! We had cinnamon rolls, fruit salad, biscotti {from TJ Maxx– they were gluten free too! Check out Ginny Bakes for some gluten free treats :)}. Other girls who came brought some more food, and it worked out perfectly. Everyone chatted, hung out, and got to know each other better. We all usually hang out in different circles, but it was great to get to know them a little better.

After cleaning up from brunch, I stopped by the dining hall to eat/hang out with the boys. I was actually pretty hungry because I couldn’t have most of the food at the brunch- fruit and gf biscotti can only get you so far! It was fun to catch up with the guys and just hang out.

A little bit later, I headed over to my boy’s apartment to fold his laundry… yep. Normally I would be totally against this- I can barely fold my own laundry without crying, but he was off doing fraternity things {it was rush weekend for them too!} so I helped him out. Either he has  a lot of clothes or he doesn’t do wash very often..hm… wonder which it could be 😉

My workout for the day  happened mid-afternoon, as a study/cleaning break. 20 minutes on the Elliptical, and 30 minutes on the Arc Trainer. Simple and easy, and the perfect stretch out from my run on Sunday. I also foam rolled for a few minutes after my workout. I really want to get a foam roller for my apartment, so I can do it when I’m just hanging out/watching TV. Any suggestions on a good brand?

Tuesday:

Yesterday morning, I woke up early to meet a friend for breakfast. Normally I sleep in on Tuesdays, but catching up with friends beats sleep any day! I headed to the dining hall and we talked for a couple of hours before deciding we should get off and be productive with our days!

^Eggs, fruit, potatoes. Gluten free, and not too shabby for a dining hall meal. I think breakfast is actually their best meal of the day!^

Around 10 am, I decided to check out the material for my Kaplan MCAT course, which starts tonight. Well… there was ~ 5 hours of diagnostic tests and 3 sections of reading to do before the class today. Oops. Needless to say, my morning and afternoon were pretty full with all that work.

After taking all the tests, I needed a mental break, so I stopped for a  workout. A 4.5 mile run followed by 15 minutes on the Arc. It felt good to run, I just wish it hadn’t been so cold outside, or I would have enjoyed the sunshine + fresh air.

After my workout and some more homework, I headed off for dinner, followed by a meeting. The rest of the night was very un-eventfully spent doing homework and reviewing for my class tonight.

The class is 6-9…definitely a marathon. I am excited though, to see what it is like {and hopefully find out that it is worth the big $$ it cost}.

I can’t function if I don’t at least get a few breaks in. My favorite study breaks are going on a 10 minute walk with a friend or a 10 min run by myself. It totally wakes me up and rejuvenates me for more studying!

Time to get married.

Yesterday started bright and early, because I was off to babysit with my mom! She nannies for the cutest 11-month old boy. He melts my heart. We had to be over at his house by 8:20 {normally it’s 6:20, but there were delays for his mom’s work because of the icy/cold conditions}. Thank goodness, because I was not ready for a pre- 5 am workout.

We packed breakfast and lunch, and headed over to hangout with this little angel.

I didn’t snap a picture of my breakfast, but it was simple– some peanut and oats Kind granola, Trader Joe’s honey greek yogurt, and a small banana. Peanuts, honey, and banana? A perfect combination.

^while our little babe was napping, I headed home to check on my sister. I also had lunch- salad with vegetables, hummus, tilapia, and quinoa. Filling and delicious.^

After lunch, I quickly chugged some water before heading to the gym to fit a good workout in. It felt good to stretch my legs and sweat after my 7 miler yesterday.

After my workout I showered, picked my mom up from her nannying job, and then headed back out to the dentist. It was great and all is in check. I shared with my dentist that I am pre-med and hoping to be a surgeon. His advice? “You should get married now, before you enter the medical field. It is too harsh without a partner.” hm… I’m a little young, but I’ll keep that in mind ;)!

I was starving by the time I got home rom the dentist. I snacked on some delicious Trader Joe’s rice crackers and hummus while heating up some leftovers. For dinner I had eggplant, carrots, and hummus on a bed of romaine lettuce. So yummy and clean!

^After dinner, I had some tea and dark chocolate while chatting with my friend Gina. Her flights have been cancelled the past 2 days because of the cold and ice here! It was so great to sneak one last night in with her before she headed back to Chicago this morning.^

Back home. And lots of driving.

December 31-January 2 were spent driving home for my mom and I. Jacksonville to New York– about 996 miles. My conference ended on Tuesday, the 31st, and my mom and I decided to get some miles down and make the next days a little bit shorter for ourselves.

Early that morning, I did a 60 min treadmill interval workout. I knew I would be in the car all day, and I wanted to get my sweat on before being stuck!

Before leaving, we stopped at Zoe’s Kitchen, a Mediterranean style restaurant. I had a quinoa salad and it was so so good.

The drive from Jax to NY is 99% on I-95. It’s insane! Driving on that one road for 6+ hours….it gets very monotonous. Luckily my mom has me to jabber away and keep her entertained! 😉 We drove from about 12-7 pm, with only one stop!

For our big New Year’s Eve party, mom and I headed out to Olive Garden. We thought it would be fast and easy, but it was so crowded! Oh well, more time for us to hang out 🙂 For dinner I went with the tilapia and shrimp off their Lighter Italian Menu. It was delicious!

After dinner, my mom and I headed to our hotel and conked out long before midnight! Oh well, haha. We needed to be prepared for another long drive the next day.

On Wednesday, my mom and I got up early to get in a little sweat sesh together. I did another treadmill workout, more incline walking than running this time. I would have preferred something different, like biking, but the options are limited when you’re in a tiny hotel!

Breakfast was eaten at our hotel before we hit the road. A little oatmeal, fruit salad, and some eggs. Plus some trail mix once we were in the car.

About an hour before we arrived in Baltimore {our stop for the day– to visit cousins!} my mom and I stopped at Applebee’s for some lunch. I had tilapia, vegetables, and potatoes Nothing special, but it did the trick.

After lunch, we stopped at Target- who can resist?! Then we headed up to Baltimore where we spent the rest of the afternoon with my family. It was great. We just talked and hung out, and enjoyed each other. I had some delicious chocolate covered pretzels, and some steamed shrimp and vegetables {we ordered Chinese for dinner}. It was a great night!

Thursday morning, I woke up before everyone else, so I got in an elliptical workout. It felt good to finally get something other than the

After realizing that a snow storm was heading towards us, we packed up as fast as we could and got on the road. Thank God, we didn’t hit any bad traffic and made it home before any real snow was coming down!

After we got home, my mom and I spent the rest of the afternoon crafting. My dad was packing up Christmas decorations like a good little elf! We watched the movie Munich. It was really intense, but very good. If you don’t mind some violence and love some suspense- you should definitely watch!

For dinner I had some homemade soup– my dad is a little chef! This was all vegetables and potatoes. Perfect for such a freezing winter night.

After the soup I also had a few peanut butter cookies! Oops.. haha today I’m starting a new challenge for January which I’ll share soon. Time to get a new plan for 2014!

Saturday morning consisted of crafts, baking, and general preparations for all the Christmas gatherings we’ll be having at our house over the next few days. The funny thing is that we won’t even be here for Christmas Eve/Day, but there will be lots of activities before then.

After some work around the house in the morning, I met a friend out to get manicures and do some shopping. My color came out a lot lighter than I thought 😦 but…later I painted over with a gold color I love! I’ll post that tomorrow. Besides– the most important part of the manicure is getting them to clean up your nails, right?!

^After shopping, we stopped in at a new restaurant, Sweet ‘n’ Savory in Port Jefferson, to try their crepes. We split and Eggplant Crepe and a Berries and Creme Crepe. They were enormous and so so delicious. Anyone in the Long Island area, you HAVE to try these. You will be more than satisfied.^

^For family dinner, I wasn’t too hunger {did you see those crepes?!}, so I stuck with the vegetable sides. Spaghetti squash, roasted broccoli, and broiled asparagus. Yum!^

^And to round out the night… a workout. 30 minutes of intervals on the Elliptical, and 20 minutes of Arc intervals. Nice and sweaty, in under an hour!^

^Saturday morning started with a nice homemade breakfast with some awesome Christian girls. On the menu: homemade pumpkin cinnamon rolls, fruit salad, and homemade pumpkin spice lattes {with the amazing pumpkin spice syrup my friend Abigail made! #pinterested}^

After breakfast, my favorite boy {NMK} and I headed downtown to the Farmer’s Market to explore. We had an awesome time! In addition to some coffee for me, and a breakfast burrito for him, we picked up some finds to make lunch. After the market we ran a bunch of other errands we both needed to get done, and then headed to my apartment.

Later that afternoon, I cooked up some veggies to get ready for the week//prevent them from going bad. I also had fun and put my food in all jars, which looks pretty and is way more organized. The one below I got for $1 dollar at Goodwill. Score! IMG_2585

my workout: Just a quick and sweaty 40 min on the elliptical.

^for dinner I had some leftover salad, and some {unpictured} cashews.^

The rest of the night was pretty calm. I baked some cupcakes and headed over to the boys’ apartment where we watched some football. After a bit, I headed back and called it a night!

Sunday:

Sunday morning  I had a brunch date with NMK. So fun! My meal is on top: tofu scramble, vegan biscuit, and fruit salad. His on bottom: roasted pepper and goat cheese omelet, toast on the side. We were both MORE than happy with our meals. If you’re in the SC upstate- check out Everyday Organic. There breakfast was great, and their lunch//dinner is even more amazing!

After brunch, I headed back and began to organize my closet + drawers. I needed to put away my summer clothes anyway AND I was getting annoyed with how messy it all was…

After that little break, I headed out for a workout. Our gym doesn’t open until 12 on Sundays, but that ended up being perfect for my schedule. For my workout: 25 minutes of Arc Trainer and 16 minutes of Elliptical. It was short and sweet– I love when I know I don’t have much time, because I always put extra effort in and leave feeling SO accomplished!IMG_2593 IMG_2594 IMG_2595

Later Sunday night, I did a little Bible Study with my boy, NMK. It’s always great to share and pray with a good Christian friend.
