Tybee Island- Spring Break 2014! The quick version.

Spring Break. A wonderful and crazy week.

The Overview:

Friday: Hanging out with the friends.

Saturday: Packing, work out, date with the boy, dinner with friends.

Sunday: Brunch, then off to Tybee Island, GA with the gang!

Monday: Beach all day, 3 hour Bachelor Finale (so not a JP fan anymore!) with my girl, hanging the rest of the night.

Tuesday: Beach day, hammocking, playing around the house.

Wednesday: Beach with another house of Furman kids (staying ~30 min from us), dinner out at the Tybee Social Club (amazing).

Thursday: Freezing day around Savannah (ok 55- but thats 15+ degrees colder than the first days we were there!). We went into Savannah, ate at Paula Dean’s restaurant, and did a walking tour.

Friday: Headed back to South Carolina!

Saturday-Sunday: Unpacking, homework, groceries, and movies with the friends.

Workouts:

Being healthy is a priority for me, and honestly it just makes me feel good. I didn’t eat as clean + healthy as I normally do, but working out was one thing I was able to keep up.

I mostly did walks/runs in the mornings before everyone else was up. One day that was 3 miles, one day 6, another day 4… whatever I was feeling.

I also fit in some circuit workouts when we were just around the house (and when I watched the Bachelor! There’s an awesome Bachelor workout that had me sweating)!

We cooked dinners as a group, which definitely cut down on costs. I tried to keep breakfast and lunch as healthy as possible, but went with whatever I was feeling!

I recommend Savannah to anyone looking for a new vacation spot, or somewhere fun to explore. It’s close to the beach, really historic, and just fun! I hear it’s also pretty haunted if you’re into that (I am 100% not.).

What I Did This Weekend!

Hey y’all! How was your weekend? Mine seemed to just fly by- isn’t that always the way?

Here’s the short version of my weekend!

Saturday:

On Saturday morning, I woke up early to get started on work and chores for the day. First up, I made some breakfast for myself, and a little later when NMK came over, breakfast for him as well!

While my boy was over, I did a little devotional and shared some prayer time with him. There is no better way to start the day.

Then it was homework time. Physics, Spanish, and MCAT work. Boring stuff, you guys don’t care about that!

A few hours later, I headed over to the dining hall for lunch with my roommate. The options were pretty slim, but I managed to get some good vegetables, some hummus, and a few chips for crunch.

The rest of the afternoon was spent studying. Boring.

I did manage to fit a workout in- 45 minutes of easy steady state on the Elliptical. Perfect for the weekend.

A little bit later, we gathered our Spring Break group to sort out details for the week. Next week is finally our Spring Break, and we’re going to Savannah, but I’ll fill you all in more after I make it through this crazy week!

We had planned to eat at our on-campus restaurant, but when we got there, the line was wrapped around and just horrifying. We ended up back at the good ole Dining Hall. Not my first choice for a Saturday night, but hey- free is free! ^^I ended up with some Moroccan Vegetable Stew and potatoes on the side. Simple and healthy {ish}.

After dinner, I finally took a break from homework and hung out with my boy and our friends for the rest of the night. Simple and fun.

Sunday:

Sunday was pretty much the same as Saturday– filled with homework. So I’ll just hit you guys with the details!

Paleo Recipes, and guilty pleasure TV.

My Sunday morning started off bright and early. I woke up about 7 am, unintentionally. I wasn’t mad, but I was a little sad I didn’t sleep more. Oh well, just got to roll with the punches!

In my early morning excitedness, I decided to bake something. I had 2 sweet potatoes cooked and sitting in my fridge, so I decided to use them as the base for a recipe. I loosely followed a recipe I found on pinterest, but then decided to get creative. Never a good idea. I am not a baker, not yet. My goal was just too lofty 😥 {insert sarcasm}.

I added in some pumpkin, before just deciding to add the whole can. I added some gluten free flour in as well, and more cinnamon. The other ingredients included some stevia, lots of cinnamon, egg whites, and coconut oil.

Well, if you couldn’t tell from this picture, it didn’t exactly turn out as planned. The result was delicious, but not bread consistency at all. More like.. warm pudding? I had a slice {if you can call it that} before getting ready and heading off to church with my boy.

Church was great, but by the time we got out, both of us were sufficiently starving. Neither of us had eaten much before the service, and it was 1240 by the time we sat down to eat somewhere. I had a coffee, and an “classic breakfast” with 2 scrambled eggs, 2 soysage pieces, and a side of cheese grits. The toast was eaten by NMK. Everything was so delicious. Coffee Underground is a great little place for a quick meal, dessert, coffee, anything. Check it out if you’re in the Upstate SC area!

My afternoon consisted of homework, woo! And still feeling exhausted from the run the day before.. that took a lot of time 😉

^^I whipped up a quick dinner in my apartment, with foods I already had prepared. Spaghetti squash, salmon, celery, tomato sauce, and goat cheese. Satisfyingly delicious!^^

Then, it was time for a little workout. I ran the 1 mile to the gym– it felt good to stretch out my sore legs. Then I did an easy 20 minutes on the elliptical, followed by a 1 mile incline walk on the treadmill. Then, I half ran/half walked the way back to my apartment.

^^A protein packed smoothie after my workout. Greek yogurt, almond milk, Sunwarrior Vanilla protein powder, and frozen berries. Topped with a few Ghiradelli chocolate chips {best chocolate around!} and some Mesa gluten free flakes. If I’m eating my smoothie with a spoon, I like it to have some crunch!^^

The rest of the evening consisted of a 20 minute session of yoga from Do Yoga With Me. There was an awesome feature where you can put in your yoga level, the amount of time you have, and if there is a specific type of yoga you want to do. I found a Post-Run runner’s yoga, which felt awesome on my tight + sore legs.

And to round out the night– my roommate Madi and I “did homework” while watching multiple episodes of the Kardashians AND the Bachelor wedding. So so trashy. So so good!

Behind Schedule//Settling In

Hey all! If you haven’t noticed, I’m running a bit behind schedule with the posts this week. Settling back in to a class/work/study schedule has been a little hectic. Not to mention catching up with friends! Busy busy , but so wonderful to be back and getting into the swing of the semester. Here are some highlights from Wednesday, Thursday, and Friday:

Workouts:

Wednesday– A quick 41 min workout on the Arc Trainer. I love this machine- easy on my body, but still allows me to challenge myself!

^Since starting school, I’ve been getting shorter, more efficient workouts in– I walk a mile {one way} to class, so it adds a lot of activity to my day {in addition to running around campus all day long}.^

Thursday– on Thursday my workout was a little all over the place. I had about 30 minutes before a meeting with a professor, so I dropped my bags off and went for a 2 mile run outside. So refreshing! I often spend very little time outside during the school week, and it makes me sad. I have to take more advantage of my gorgeous campus.

Later on after dinner I ran 2 more miles on the treadmill {it had gotten dark + freezing outside} and then walked another 10 minutes on an incline for a good cool down.

Friday– Friday was another jumbled workout. I wasn’t sure if I would have free time in the afternoon, so I between my first class and lunch/my second class, I  did a quick 15 minutes on the Elliptical, followed by a 15 minute circuit from the Nike Training Club App.

After being in the lab all afternoon, I still had some time before I was meeting up with friends, so I hopped back on the Elliptical for 20 minutes, before walking the mile back to my apartment.

^These are all salads, Dining Hall style. Usually it’s lettuce/spinach, lots of toppings, feta cheese, some sort of protein {beans or tofu–the meat is sketchy, and since I just started eating meat…I’m not that adventurous yet}. A couple of corn chips if I feel like it- but I try not to get them too often/too many because I’m not sure if they are 100% gluten free.^

^On Wednesday afternoon, I went for a coffee date with a friend.  I had the most delicious cappuccino and 2 hours of great conversation. There is nothing in the world like chatting with a wonderful Christian friend about the ups and downs of our lives!^

Last but not least. I took a Buzzfeed quiz last night and found out that I should actually be living in Barcelona! I was so so so happy to hear that- I love Spain and Barcelona is absolutely my favorite city I have ever visited in Europe. Guess I have a new life plan 😉

Roasting and Freezing.

Yesterday was freakishly warm and it was awesome! At least it was when the day started. It was 55 when I woke up, but it was 32 by the time we went to bed and 9 degrees— 9 degrees guys– when we woke up this morning. Yesterday was a nice relief from the cold, and it definitely helped us gear up for the below freezing temps we’re experiencing today/expecting the rest of the week.

My mom and I actually left the house before 9 am yesterday to go renew my military ID. Unfortunately, we ran into pouring rain and huge wind gusts, which led to bumper-to-bumper traffic. About 25 minutes into our drive, we turned around and decided to conquer that chore on a less formidable day. Luckily, Trader Joe’s was on our way home, so we picked up a huge haul of veggies, snacks, and frozen foods to get us through this cold week.

After we got home, my mom and I got to work chopping and cooking all the vegetables. My sister leaves today to go back to her Master’s program, so we wanted to make a special dinner for her {and she’s a vegetarian}.

^After all that cooking, and some crafting, I was more than ready for lunch! I didn’t really have anything specific in mind, so I whipped up a little egg, onion, and quinoa in the pan. Sort of like fried rice minus the soy sauce. I have a big batch of quinoa that I need to eat up before I leave on Saturday, so I’m getting creative with with it!^

After lunch, my mom, my friend Krista, and I headed to the Tanger Outlets mostly to make returns, but also to look around a bit ;). Who could resist?!

After we got home from shopping, I headed out to the gym to bust out 7 miles. It was great, best run I’ve had in a while! I still had to push myself, but it wasn’t as difficult as some of my runs were while I was traveling. Probably because I’m better nourished, well-slept, hydrated, etc. than I was when traveling. Felt great! I stopped after 4 miles for a bathroom break… still figuring out what I’m going to do on my race…. woods? I’ve heard port-a-potty lines can be ridiculously long!

After dinner I watched the Bachelor with my mom, and love it already! Juan Pablo is adorable, but the girl drama is my favorite part! 😉

Holiday Highlights

Before Christmas, we had lots of parties, fun, and all around hectic-ness. My mom and I babysat, and I needed to keep up to date with my workouts {hello, half marathon training!}. With all the treats and fun, I had to make sure I kept healthy and on track. I got in a workout almost everyday, except two when we were driving pretty much all day/went straight to family after a long drive. But rest is good too!

Also, if you guys haven’t noticed, I have gone gluten free in the last month. It has to do with my Hypothyroidism, which is officially “Hashimoto’s Thyroiditis” and is an autoimmune condition. Since eliminating a lot of gluten from my diet, I haven’t noticed a huge difference in my day to day feel, but I have noticed that when I eat a lot of gluten at one time/in one day, I can definitely feel a negative effect. Digestion/stomach wise, and energy wise as well. It’s an experiment in process. One of my goals for the holidays was to not overload on the gluten, knowing that it would really affect how I felt. I didn’t do a great job but I didn’t do a terrible job either!

Enough rambling… here are some holiday highlights.

Eats:

A lot of savory breakfasts. In an effort to combat sugar cravings and offset treats.. I have eaten a lot of savory breakfasts in the past weeks. It’s really nice to start the day with veggies, and at least know I’m getting off on the right foot. Above ^^ spaghetti squash, bell peppers, some Earth Balance butter, and goat cheese.

^We had friends over for brunch one morning and produced quite a spread. Yes, that is a cupcake in the background. 2 actually. What else are you supposed to do when 2 of the most adorable kids are coming over?! I ate some fruit, yogurt, granola, and some peanut butter cookies. They’re gluten free! That makes cookies before 12 ok..right? 😉

^And last, an awesome salad I made when we had friends over for dinner. We ordered in pizza, but I was trying to stay off the gluten, so I make this huge salad from all the fixins. Everyone ate smaller side salads, but I was happy with my monstrosity!^

Workouts:

Before I left for family holidays and my conference, I got a 7-day pass to a local gym. It was so nice of them to give it to me for free, especially because they knew I don’t go to college here and wasn’t interested in buying a real membership.

Workouts mostly consisted of runs {half marathon trainings}! When I wasn’t running, I did some circuits, some elliptical, and some biking. Kept it simple while on the road with mostly cardio, which I was able to do in the morning before family time, conference things, travel, or whatever was going on that day! When I’m at home/school I can normally get away with a workout later in the day, but when traveling/away I find it so much easier to do it before anyone else is up {unless they want to come with me of course!} and not worry about when I’ll have time later.

Snow and Modge Podge.

Yesterday morning, we woke up to… 10 inches of snow! And it was still coming down. By 10 am it had stopped and we now have a solid 13 inches around our house. Snow is awesome, I love it. Especially the powdery kind like this. It’s light, fluffy, and oh so fun to play with. The part I don’t love…. the freezing temps. It’s been under 10 degrees since yesterday morning. Right now its finally a balmy 17! This little South Carolina girl hasn’t been in 17 degree weather since…. maybe my senior year of high school? This winter is coming for me… but I’ll be back in warm SC weather a week from now. I think I can last until then!

I was so happy to find out that Kind makes awesome gluten free granola. Since going {mostly} gluten free because of my Hashimoto’s, I have been missing my granola and yogurt bowls. I just love that crunch! Huge shout out to Kind for being an awesome, wholesome company!

After getting some work done, I headed into our basement to plow through some circuits. I got the workouts from Sarah’s book, “Get Skinny Again”. I loved how simple the moves were, and the circuit style. They were formatted to be done at home and considering we were stuck inside, that was perfect. Also- irony. I watched Cupcake Wars while working out…

Lunch was simple, some roasted butternut squash, goat cheese, mixed nuts, and balsamic on lettuce. Followed by some straight up romaine leaves dipped in hummus. Because, that salad was not as filling as I thought. I love crunch lettuce as a dipping device… less guilt that chips and let’s be real, all I really care about is maximum hummus leverage ;).

Afternoon activities: crafting and hanging out with my mom. I am making collage letters for all my roommates and it is so fun! Luckily we already have a huge collection of already cut out magazine words/pictures {thanks Mom!}. Nothing better than crafting on a snowy day!

^A little later, I had a last snack of greek yogurt and trail mix. Just cashews, almonds and cranberries. I know dried cranberries aren’t the best {added sugar} but in the past I would always go for the most chocolate-laden trail mix and pretend it was healthy… so small changes! #Lean14^

After heading up to my room for the night {my mom fell asleep on the couch…all that crafting!} I did another 10 minutes of a circuit while watching Pretty Little Liars. I started earlier this fall and have slowly been catching up on Netflix. It gets crazier with every episode!

Back home. And lots of driving.

December 31-January 2 were spent driving home for my mom and I. Jacksonville to New York– about 996 miles. My conference ended on Tuesday, the 31st, and my mom and I decided to get some miles down and make the next days a little bit shorter for ourselves.

Early that morning, I did a 60 min treadmill interval workout. I knew I would be in the car all day, and I wanted to get my sweat on before being stuck!

Before leaving, we stopped at Zoe’s Kitchen, a Mediterranean style restaurant. I had a quinoa salad and it was so so good.

The drive from Jax to NY is 99% on I-95. It’s insane! Driving on that one road for 6+ hours….it gets very monotonous. Luckily my mom has me to jabber away and keep her entertained! 😉 We drove from about 12-7 pm, with only one stop!

For our big New Year’s Eve party, mom and I headed out to Olive Garden. We thought it would be fast and easy, but it was so crowded! Oh well, more time for us to hang out 🙂 For dinner I went with the tilapia and shrimp off their Lighter Italian Menu. It was delicious!

After dinner, my mom and I headed to our hotel and conked out long before midnight! Oh well, haha. We needed to be prepared for another long drive the next day.

On Wednesday, my mom and I got up early to get in a little sweat sesh together. I did another treadmill workout, more incline walking than running this time. I would have preferred something different, like biking, but the options are limited when you’re in a tiny hotel!

Breakfast was eaten at our hotel before we hit the road. A little oatmeal, fruit salad, and some eggs. Plus some trail mix once we were in the car.

About an hour before we arrived in Baltimore {our stop for the day– to visit cousins!} my mom and I stopped at Applebee’s for some lunch. I had tilapia, vegetables, and potatoes Nothing special, but it did the trick.

After lunch, we stopped at Target- who can resist?! Then we headed up to Baltimore where we spent the rest of the afternoon with my family. It was great. We just talked and hung out, and enjoyed each other. I had some delicious chocolate covered pretzels, and some steamed shrimp and vegetables {we ordered Chinese for dinner}. It was a great night!

Thursday morning, I woke up before everyone else, so I got in an elliptical workout. It felt good to finally get something other than the

After realizing that a snow storm was heading towards us, we packed up as fast as we could and got on the road. Thank God, we didn’t hit any bad traffic and made it home before any real snow was coming down!

After we got home, my mom and I spent the rest of the afternoon crafting. My dad was packing up Christmas decorations like a good little elf! We watched the movie Munich. It was really intense, but very good. If you don’t mind some violence and love some suspense- you should definitely watch!

For dinner I had some homemade soup– my dad is a little chef! This was all vegetables and potatoes. Perfect for such a freezing winter night.

After the soup I also had a few peanut butter cookies! Oops.. haha today I’m starting a new challenge for January which I’ll share soon. Time to get a new plan for 2014!

^Last dinner with my gorgeous roomie! Mahi Mahi burgers, quinoa, goat cheese, and roasted pearl onions + brussels sprouts. This was amazing. Goat cheese has a special place in my heart.^

^The last meal before I headed home from school. I went all out with fries, I live a wild life. And a black bean burger under all those vegetables.^

Saturday morning consisted of crafts, baking, and general preparations for all the Christmas gatherings we’ll be having at our house over the next few days. The funny thing is that we won’t even be here for Christmas Eve/Day, but there will be lots of activities before then.

After some work around the house in the morning, I met a friend out to get manicures and do some shopping. My color came out a lot lighter than I thought 😦 but…later I painted over with a gold color I love! I’ll post that tomorrow. Besides– the most important part of the manicure is getting them to clean up your nails, right?!

^After shopping, we stopped in at a new restaurant, Sweet ‘n’ Savory in Port Jefferson, to try their crepes. We split and Eggplant Crepe and a Berries and Creme Crepe. They were enormous and so so delicious. Anyone in the Long Island area, you HAVE to try these. You will be more than satisfied.^

^For family dinner, I wasn’t too hunger {did you see those crepes?!}, so I stuck with the vegetable sides. Spaghetti squash, roasted broccoli, and broiled asparagus. Yum!^

^And to round out the night… a workout. 30 minutes of intervals on the Elliptical, and 20 minutes of Arc intervals. Nice and sweaty, in under an hour!^

Off to the family holiday party!

what finals look like.

Finals are over guys! I know it’s been a loooong week and I am just glad to be home and free to breathe//not worry about school {except those grades that still aren’t out ha!}

a quick overview of finals– and I’ll be back tomorrow with more regular posting! I am so excited to share the Christmas season and my half marathon training with you guys!

The Studying:

Workouts–

I stuck to mainly Elliptical and Arc workouts this week– it’s easier for me to do intervals on them– and get in and out of the gym fast. I know working out during finals can seem impossible, but it really is an amazing stress relief. Plus, did you know that working out increases your short term memory? Score! {so do it right after studying!}

There were 2 days when I only got a minimal workout, but even just a 10 minute run as a study break helped wake me up, improve my mood, and re-energize me for more studying!

^Thursday night– puppy break! I love that our school does this. Puppies are the best break :)^
