What I Did This Weekend!

Hey y’all! How was your weekend? Mine seemed to just fly by- isn’t that always the way?

Here’s the short version of my weekend!

Saturday:

On Saturday morning, I woke up early to get started on work and chores for the day. First up, I made some breakfast for myself, and a little later when NMK came over, breakfast for him as well!

While my boy was over, I did a little devotional and shared some prayer time with him. There is no better way to start the day.

Then it was homework time. Physics, Spanish, and MCAT work. Boring stuff, you guys don’t care about that!

A few hours later, I headed over to the dining hall for lunch with my roommate. The options were pretty slim, but I managed to get some good vegetables, some hummus, and a few chips for crunch.

The rest of the afternoon was spent studying. Boring.

I did manage to fit a workout in- 45 minutes of easy steady state on the Elliptical. Perfect for the weekend.

A little bit later, we gathered our Spring Break group to sort out details for the week. Next week is finally our Spring Break, and we’re going to Savannah, but I’ll fill you all in more after I make it through this crazy week!

We had planned to eat at our on-campus restaurant, but when we got there, the line was wrapped around and just horrifying. We ended up back at the good ole Dining Hall. Not my first choice for a Saturday night, but hey- free is free! ^^I ended up with some Moroccan Vegetable Stew and potatoes on the side. Simple and healthy {ish}.

After dinner, I finally took a break from homework and hung out with my boy and our friends for the rest of the night. Simple and fun.

Sunday:

Sunday was pretty much the same as Saturday– filled with homework. So I’ll just hit you guys with the details!

^^A healthy dinner to round out the night, whilst watching the Oscars with my roommates. Sweet potatoes, asparagus, Sole fillet, hummus, artichoke hearts, green peppers, and onions. I spoil myself!^

Question of the day:

What was the highlight of your weekend?

The sun was shining, and I am feeling good!

Sundays are usually either a super busy or super relaxing day for me. This Sunday, I ended up with sort of a mix of things. I was busy, but not rushing around + doing homework like I normally am.

Sunday morning started off nice and early, at church with my favorite boy. This week was the last in their series about A Theology of Sex. Yesterday’s focus was specifically on Healing from Sexual Sin. We focused on 1 Corinthians 6:9-11. I felt like I got a lot out of the talk. It’s available online along with all the other talks, if any of y’all are interested {^click the link above^}!

After church, we headed off to the Dining Hall for a Sunday morning brunch. I went with gluten free granola, rice chex, peaches, and greek yogurt. Delicious and simple way to start the day.

The boy and I followed brunch up with episode 2 of House of Cards. OH MY GOSH. It is too good. No spoilers here, but Y’ALL if you haven’t watch HofC yet, you do not know what you’re missing. It is the most suspenseful and shocking TV show I have ever watched. And I love it for that.

For a few hours, I just worked on homework and getting all the things done that I had put off during the snow days. It was a lot more than I thought… oops! The homework went on and on, before I lost my motivation and headed out for a walk + workout. There was some lunch-esque snacking during the homework at well- chips and hummus, carrots, and lettuce I believe.

I took advantage of the beautiful day and got my walk on while I talked to my mom on the phone. We talk pretty much every day, and I wouldn’t have it any other way! Campus ^^ was looking especially beautiful in the sunshine, and it was great to get out of my apartment and enjoy some fresh air + sunshine.

My workout consisted of 30 minutes on the Arc trainer and a 1 mile incline HIIT on the treadmill. I walked at 4+ mph and put the incline between 9-12 %. It felt good to do a treadmill workout that wasn’t just a run!

^^and to finish off the night- a giant salad for dinner. Lettuce, peppers, carrots, rice, leftover fish {from Valentine’s Day}, and a little rice. It was entirely too delicious! I followed up this healthy dinner with some Ben & Jerry’s Liz Lemon Greek Frozen Yogurt. It is so good! The lavender swirl makes me swoon…^^

Paleo Recipes, and guilty pleasure TV.

My Sunday morning started off bright and early. I woke up about 7 am, unintentionally. I wasn’t mad, but I was a little sad I didn’t sleep more. Oh well, just got to roll with the punches!

In my early morning excitedness, I decided to bake something. I had 2 sweet potatoes cooked and sitting in my fridge, so I decided to use them as the base for a recipe. I loosely followed a recipe I found on pinterest, but then decided to get creative. Never a good idea. I am not a baker, not yet. My goal was just too lofty 😥 {insert sarcasm}.

I added in some pumpkin, before just deciding to add the whole can. I added some gluten free flour in as well, and more cinnamon. The other ingredients included some stevia, lots of cinnamon, egg whites, and coconut oil.

Well, if you couldn’t tell from this picture, it didn’t exactly turn out as planned. The result was delicious, but not bread consistency at all. More like.. warm pudding? I had a slice {if you can call it that} before getting ready and heading off to church with my boy.

Church was great, but by the time we got out, both of us were sufficiently starving. Neither of us had eaten much before the service, and it was 1240 by the time we sat down to eat somewhere. I had a coffee, and an “classic breakfast” with 2 scrambled eggs, 2 soysage pieces, and a side of cheese grits. The toast was eaten by NMK. Everything was so delicious. Coffee Underground is a great little place for a quick meal, dessert, coffee, anything. Check it out if you’re in the Upstate SC area!

My afternoon consisted of homework, woo! And still feeling exhausted from the run the day before.. that took a lot of time 😉

^^I whipped up a quick dinner in my apartment, with foods I already had prepared. Spaghetti squash, salmon, celery, tomato sauce, and goat cheese. Satisfyingly delicious!^^

Then, it was time for a little workout. I ran the 1 mile to the gym– it felt good to stretch out my sore legs. Then I did an easy 20 minutes on the elliptical, followed by a 1 mile incline walk on the treadmill. Then, I half ran/half walked the way back to my apartment.

^^A protein packed smoothie after my workout. Greek yogurt, almond milk, Sunwarrior Vanilla protein powder, and frozen berries. Topped with a few Ghiradelli chocolate chips {best chocolate around!} and some Mesa gluten free flakes. If I’m eating my smoothie with a spoon, I like it to have some crunch!^^

The rest of the evening consisted of a 20 minute session of yoga from Do Yoga With Me. There was an awesome feature where you can put in your yoga level, the amount of time you have, and if there is a specific type of yoga you want to do. I found a Post-Run runner’s yoga, which felt awesome on my tight + sore legs.

And to round out the night– my roommate Madi and I “did homework” while watching multiple episodes of the Kardashians AND the Bachelor wedding. So so trashy. So so good!

Weekend Warrior.

So I’m not entirely sure, but I think at college people use the term ‘weekend warrior’ for people who study hard during the week, but go hard on the weekends. I enjoy hanging out with friends on the weekends…but I’m definitely not someone who ‘goes hard‘. My version of weekend warrior is… working out, getting food prep done for the week, and cleaning the mess I’ve made during the week. Some may call me crazy ;). I do also enjoy using the weekends to catch up with friends who I don’t see during the week.

Saturday

On Saturday morning, I woke up super early- like 6 am early. I don’t know why but.. I felt really well rested, so I just rolled with it. No one else in my apartment was awake yet, so I chilled on the couch for a while, {ok I was on pinterest} before moving our table out of the way and doing a quick 10 minute circuit. It felt good to get in some movement first thing in the morning. And even better to not have to go outside to do it! I watched some Kardashians while doing my workout/chilling. Guilty pleasure TV.

^A little bit later, I sipped on some Trader Joe’s Roasted Red Pepper Tomato Soup. Kind of weird breakfast choice..but it was a nice way to get some vegetables in first thing!^

After the soup, I roasted some spaghetti squash and some sweet potatoes, before whipping up some Gluten Free Banana Bread {recipe to come!}. I obviously proceeded to snack on some of that before putting it in the fridge {so I didn’t inevitably finish off the entire thing}.

After organizing my room and doing some laundry, I ran out to grab groceries for the week + grab some decorations from TJ Maxx. I spent more than planned, but it is so fun to add cute items to our apartment! After the errands, I headed over to the gym for a little workout. I didn’t want to do anything crazy because I knew I had a long run on Sunday, and my legs were still a little sore from my circuit workout Friday. I did 50 minutes on the Arc Trainer. Have to keep that endurance up for my long runs! #halfmarathonhereIcome

After the workout, I showered, changed, and threw together a quick dinner. Spaghetti squash, green pepper, hummus, tomato sauce, and tilapia. Quick + easy. I threw an apple in my bag and ran out to go babysit.

Babysitting was so much fun. Most people at school are busy with Greek Recruitment this weekend, but I was free! My roommates are all independents as well, so we were still able to have some fun. Anyway, babysitting was great. This little nugget was too cute, and we played kitchen, matching games, and danced for a couple of hours. I put her to bed around 9 and had an hour to chill by myself before her parents came home. I don’t really love being alone in someone else’s house {hello– creepy?!} but Pinterest and Netflix kept me happy and distracted :).

After babysitting, I spent the rest of the night hanging out with my boy. We just chatted and he tried to roll a knot out of my leg! So painful but awesome- definitely helped for my run! We also snacked on some Brie and hummus. I love me some cheese.

Sunday:

Sunday morning, the boy and I headed off to church together. Church wasn’t until 11, so I had planned on getting some work done beforehand. Instead, I slept in until 9:30 and then got ready for church. Between getting ready and leaving early to get there {and pick up the boy} I didn’t have time for much breakfast, so I just grabbed a slice of my GF banana bread, and headed out the door.

By the time we got out of church at 12:30, I was pretty hungry and NMK was getting super hungry. It was real. {I kid.} We tried to go to Everyday Organic, my favorite local restaurant but they were all full, and we were not in the mood to wait. Since it was 1 pm by this time, we decided lunch fare would be acceptable. Thai food it was! I got some Red Curry with rice, which turned out to be awesome fuel for my long run!

After digesting and cleaning for about an hour, I headed over to the gym for my run. I try to run outside as often as possible, but I just wasn’t prepared for it yesterday. I don’t know.. I have to be in the right mental place- you know? I did my 9.5 miles, without stopping, and in a 9:40+ pace. I know– I’m not fast! But it felt great to get through, and I was speedy for me! I aim to finish my long runs under 10 min/mile. Nothing too crazy or ambitious for my first half! The run felt awesome, and I was so so happy! The middle miles were definitely a little boring, but I never felt like I needed to die. That’s a win!

After the run, I showered and cleaned up our apartment some. I also CHUGGED water. I filled three bottles and told myself to finish them before doing anything else. I wanted to make sure I hydrated. It makes such a difference in how I feel the next day, and I am definitely thankful for that today. I also had some greek yogurt mixed with protein powder. My muscles need that protein!

After resting for a while, my friend Sarah came over to join my roommates and I for a fun Girls’ Night! We had hummus, brie, goat cheese, guacamole, chips, crackers, and salsa. Tapas, delicious style. After chatting, painting our nails, and chowing down, we flipped on Revenge. I love love love Revenge. It is taking some crazy twists and turns this season- y’all should check it out! I am so sad it won’t be back on till March. At least I’ll have the Olympics to distract me.

A little later, we split some Half Baked ice cream from Ben & Jerry’s. It was amazing. Perfect treat after that long run!

How’s the weekend guys? So far mine has been super relaxing and just the destress I needed

Friday:

To kick off the weekend, I ran some errands with my boyfriend, and Dixon, another good friend of ours. We started off at Whole Foods, and grabbed some lunch from the salad bar. We’ve been doing this with some variation of our friend group for the past few weeks- Whole Foods Friday, a wonderful tradition I’m hoping to continue. From there we hit up all the {food} stores — including Trader Joe’s, and Publix, before heading back to school.

That afternoon I cleaned up my room some, relaxed, and just took care of little chores I had been meaning to do. I was able to get my workout done earlier in the day– so it was nice not to have that in the middle of my afternoon!

Later I headed out my some of my roommates and some girl friends for a loooooooong dinner with lots of girl talk– the perfect Friday dinner.

^I watched about half of 27 dresses with the roommates before heading over to see NMK (the boyfriend) and hang with his roommates. We watched some weird comedian on Netflix and just hung out. Great night!^

Saturday:

^Saturday morning I woke up early so I chilled with the news and coffee until everyone was ready for breakfast around 12! Plenty of morning relaxation time for me.^IMG_2868^We kept it simply and eat at the Dining Hall. I went with eggs and potatoes, followed by some fruit. Simple and easy^

After breakfast, I drove NMK and 3 other guys downtown for the Greenville Craft Beer Festival. Not exactly my cup of tea {plus the $45 tickets..} so I just opted to DD for them. I spent the afternoon chilling in a coffee shop downtown trying to get work done. When that didn’t work, I spent about an hour walking around, chatting on the phone with my mom! It was really great to get outside and enjoy the weather.

My afternoon also included a trip to the Apple Store downtown because my charger broke 😦 I originally bought one from Amazon, but I’ve heard horror stories about those being really sketchy and not working… so I took the plunge and spent $80 dollars to buy a charger from Apple.

The rest of my day was working out, baking some gluten free goodies {up soon!}, and an early bedtime to rest up from/for the week!

Challenging your worship:

The past few weeks I’ve been shopping around Greenville to find a church to go to. The past two years at Furman, I haven’t really explored beyond the campus for religious life. I have loved my experience being a part of the Furman chapel worship, however, as a junior, I was ready to look for a congregation that was more diverse in age, and perhaps had some new aspects to offer to me.

My first week, I tested out Christ Church in downtown Greenville. Christ Church is an episcopalian church, and definitely traditional in style. I actually tested out two different services at Christ Church {over the course of 2 weeks}. While I certainly enjoyed the services, there wasn’t exactly the feeling I was looking for…although I wasn’t sure what that feeling was.

This past Sunday, I decided to try out Grace Church in downtown Greenville. Grace Church is anything but traditional. Growing up in a Catholic church, I am more used to a traditional style of worship. It’s more comfortable and easy for me. Going into a contemporary church like Grace Church was not “easy” for me but…is that necessarily a bad thing? Taking part in a form of worship that was so different from my typical mode was so….engaging. Being put into a situation I am not entirely familiar with….definitely challenged me to open my heart and deeply worship, as opposed to when I am too comfortable and “settled”…and tend to zone out to the service.

Of course, I could actively work to engage myself fully in my familiar settings…but for now I am sticking with Grace Church. I am excited to see how this contemporary worship will enhance and deepen my relationship with God. It’s an exciting journey and I’m ready to start.

reverse.

Hey all! it’s been a few days since a real post so…this is those few days in reverse!

Sunday:

This morning started off with a church visit with the boy. We went to Grace Church in downtown Greenville. It was pretty awesome. A contemporary sort of service, nondenominational, with a very engaging preaching service. Then we headed back to campus and to the Delicious House {aka Dining Hall} for breakfast. {that’s a sarcastic name by the way}.

Saturday:

Saturday started off in the beautiful mountains of South Carolina. I was on a retreat for a scholarship program I do through the chapel called “Exploration of Vocation and Ministry”. The view was incredible.

Saturday night, after returning to school and getting a workout in {Elliptical + bodyweight circuit} I headed out to dinner with some friend. They recently opened a grill/bar-esque sort of restaurant on campus, so we headed over to give it a try. They don’t have a ton of options, but for a restaurant at a school of only 2500 people, I think they’re doing pretty well. They also serve wine and beer, which everyone is pretty stoked about. I went for a black bean burger in a lettuce wrap ‘Southwestern Style’ which meant some guacamole and pico de gallo. I got a side of fresh fruit, and ended up stealing some sweet potato fries from my boys as well. For a meal bought with ‘points’ and not actual money, I’d say if was pretty awesome! Plus… do you see the view we had? Can’t get that too many places.

Later that night, we headed out to the ‘America Party’ chez our Pi Kappa Phi. It was great- I wish I had a pic of my America outfit, but I always seem to let pictures fall to the wayside at parties, because I’m too busy enjoying myself!

Friday:

Friday started early with a workout before the craziness of the day. I had to leave for a retreat early in the afternoon, so I wanted to make sure I worked it before the day got away from me. I did a little of everything {bike, elliptical, arc} and then headed back to my apartment.

breakfast post workout- 2 mini corn tortillas from Trader Joe’s. First with greek yogurt and honey {to get some protein!} and the second with apple butter and granola. Plus my apple cider vinegar and some water to rehydrate. I ate while studying for my Physics test!

After our physics test, the boy took me out for a lunch date at one of my favorite local places- Everyday Organic. So so good! I got the ‘everything salad’ and split the Mediterranean Feta dip. We called ahead, since we were in a bit of a rush, and when we arrived we had this super official set up waiting for us. Needless to say, we felt pretty cool!

About an hour later, we headed off for the retreat. Good bonding time with a new group, and great reflection time in nature.

the weekend of 9 miles.

this weekend was filled with friends + fun {ok, and some schoolwork too}. the perfect mix, no?

Saturday:

This Saturday started off early with a trip to the annual sale at Sunrift Adventures in little ol’ Travelers Rest, SC. Isn’t that the cutest name for a town? It literally got its name from being a rest for travelers before they went on a bit north where you come to the mountains. It’s also because travelers would have to wait here during the winter before the snow cleared and they could pass over the mountains into North Carolina. Pretty cool.

At the sale, I planned to look for a bike. My apartment {on campus} is pretty far from main campus this year {about 1.2 miles. which sounds close, but it’s the farthest you can be from academic buildings for my lil’ school. the backyard of our building is the gate to leave hah}, so I was looking for a bike to make the morning commute a little less painful. Unfortunately, all the bikes were considerably more than I was looking for. Oh. Guess I’ll be looking at Walmart or some garage sales.

After breakfast we headed over to The Forest Coffeehouse for some coffee to wake up. My treat to thank the boys for waking up before 9 on a Saturday! A feat in itself.

A little later in the day, we drove to Whole Foods + Trader Joe’s for some groceries and some lunch! Yummmmmm. I’m a total sucker for the Whole Foods prepared foods sections. Can y’all resist? This plate is a total mish mash- strawberries, lettuce, roasted peppers, buffalo tofu {legitimately delicious, probably the best tofu I’ve ever had. My meat-eating boy was actually the one who suggested it. So, that’s a good sign} quinoa salad, and a little apple crisp because either A) I have no self control or B) I hadn’t eaten yet and had no discretion in loading my plate up. {answer is actually A and B}. Everything was delicious. I felt so spoiled, enjoying a classy meal, on a beautiful day, with a bunch of great friends.

We stopped to see some puppies…these were 5 days old. My heart melted into mush for these little guys!

Workout happened later in the day, as a study break. Some biking, elliptical, arc and then a barbell circuit with the boy.

Saturday night, we headed out to support our Furman Paladins Men’s Soccer team against College of Charleston. The game turned out to be SUPER suspenseful, tied at 0-0 at the end of both halves. We went into overtime, and within 4 minutes, a freshman scored the winning goal. It was even more awesome considering they had just put him in for OT and it was his first appearance of the season. Woo! Go ‘dins!

Then I headed downtown for some church time with the boy. We’re currently in the process of figuring out which church we’d like to belong to in Greenville. So far Christ Church, and Renewal have been great, but we’re going to try a few more out settling on our final decision.

After heading back to school, I made myself a little lunch in the apartment. Veggies, black bean burger, and plenty of hummus. Those cherry tomatoes have my heart.

Because I was about to go run 9 miles! My farthest distance yet. I still can’t really believe it happened… but I am so so happy I did it!

The run was a LOT harder than my 8 miler last week. For almost the entire run, my legs felt tired and I really had to drag them along. Maybe it’s from a bit too much activity this week? Maybe I was dehydrated? I’ll have to reassess for my next long run!

Anywho- I finished it! And felt like a champ!

After my run, I quickly showered and dress {a challenge when my legs felt like collapsing} and headed over to the Vista House {an intentional Christian community} for their Sunday night $4 dinner. It was amazing {and mostly local/seasonal :)} as expected. Rice and beans, salad, homemade bread, and some avocado.

When I got back from dinner, I did a little {we’re talking MINIMAL} more homework, then got up to some tomfoolery. Mostly taking selfies, eating some cookie dough {hey I ran 9 miles! I got to reward my bod a little!}, wearing my compression socks, and cuddling with the roommate and boy. It was the perfect end to the weekend!
