The sun was shining, and I am feeling good!

Sundays are usually either a super busy or super relaxing day for me. This Sunday, I ended up with sort of a mix of things. I was busy, but not rushing around + doing homework like I normally am.

Sunday morning started off nice and early, at church with my favorite boy. This week was the last in their series about A Theology of Sex. Yesterday’s focus was specifically on Healing from Sexual Sin. We focused on 1 Corinthians 6:9-11. I felt like I got a lot out of the talk. After church, we headed off to the Dining Hall for a Sunday morning brunch. I went with gluten free granola, rice chex, peaches, and greek yogurt. Delicious and simple way to start the day.

The boy and I followed brunch up with episode 2 of House of Cards. OH MY GOSH. It is too good. No spoilers here, but Y’ALL if you haven’t watch HofC yet, you do not know what you’re missing. It is the most suspenseful and shocking TV show I have ever watched. And I love it for that.

For a few hours, I just worked on homework and getting all the things done that I had put off during the snow days. It was a lot more than I thought… oops! The homework went on and on, before I lost my motivation and headed out for a walk + workout. There was some lunch-esque snacking during the homework at well- chips and hummus, carrots, and lettuce I believe.

I took advantage of the beautiful day and got my walk on while I talked to my mom on the phone. We talk pretty much every day, and I wouldn’t have it any other way! Campus ^^ was looking especially beautiful in the sunshine, and it was great to get out of my apartment and enjoy some fresh air + sunshine.

My workout consisted of 30 minutes on the Arc trainer and a 1 mile incline HIIT on the treadmill. I walked at 4+ mph and put the incline between 9-12 %. It felt good to do a treadmill workout that wasn’t just a run!

^^and to finish off the night- a giant salad for dinner. Lettuce, peppers, carrots, rice, leftover fish {from Valentine’s Day}, and a little rice. It was entirely too delicious! I followed up this healthy dinner with some Ben & Jerry’s Liz Lemon Greek Frozen Yogurt. It is so good! The lavender swirl makes me swoon…^^

Hurts So Good.

Ah, Sundays. For me that usually means church, active rest//light workout days, and lots lots lots of homework {which I’ve usually put off all week/weekend..}. This Sunday, I started my day off with a simple breakfast– banana, greek yogurt, and some trail mix. A little healthier today, since my trail mix didn’t include any M&Ms {disclaimer: that is because I ate all those m&ms yesterday ;)}.

After some studying in the morning {para mi examen de español esta lunes} I snacked on some trail mix + fruit.

Then, I headed off to the gym to get a workout in. The 1 mile walk to the gym was a nice warmup. At the gym, I biked for 10 minutes, before hopping on the Elliptical for a 30 minute stint. My legs were definitely sore from that 12 miler yesterday, but this workout stretched them out. It hurt so good!

Sunday night was spent studying and trying not to stress over my Español examen Monday morning. Dinner was a mix– tilapia, bell pepper, onions, spinach, lettuce, and goat cheese. Basically all the leftovers I had sitting around! Followed up by some popcorn. Just the way I like to study 😉

Monday:

Monday morning started off early early. I woke up at 6:20 {guess I was nervous about my test!}, and studied for a few hours before whipping up something to eat. Greek yogurt, an apple, Cascadian Farms Cinnamon Raisin granola, and some cinnamon on top! Perfect healthy breakfast before a test day!

My first class was so long and so boring I practically fell asleep. #sorrynotsorry.. Physics just isn’t my thing!

Then it was more study study study and some lunch.

I went with a jumbo salad again! This is pretty much my classic Dining Hall meal– there aren’t many healthy options there, so I stick to what works. I don’t mind– this combination is pretty delicious! I used to nom hard on the pita chips, but now that I am gluten free, I can’t. Oh well.. probably healthier anyway ;)!

The test went well! It was long, but I am glad to be done with it. I always feel like the first test is the hardest– I don’t know what to expect, or what the professor’s style will be. But, once you get past that first hurdle, you have a better idea of how to study!

The afternoon was spent in the lab. Some days it’s the MOST interesting and I get a ton done. Yesterday, was not one of those days. I spent 2 hours trying to get a system to work. Oh well, they can’t all be fun days!

My workout was simple, because my little legs were still sore from Saturday. I hopped on the Elliptical for 10 minutes, before a treadmill freed up. Then I did a 30 minute HIIT workout on the treadmill. I ran 6.5-6.7 at a 0% incline, and then every .1-.2 miles, I increased the incline from 1-4%, and increased the speed. It felt awesome, and I definitely pushed myself harder than I normally do on the treadmill. I love a workout that changes it up and challenges me!

For dinner, I ate at the Dining Hall again– Chili and chips + hummus for me.

Then it was 6-9 pm of my MCAT class. Not the most fun night, but hey, it’ll pay off when I’m taking that test in May!

Hey y’all! It’s been a few days! Things are crazy here. For the South at least. It started Tuesday afternoon, with snow, then a snow day Wednesday, and now..it’s Thursday morning and a balmy 17 degrees out. Oof! This New York girl has gone week, and this weather is too cold for me! Anywho.. let’s back up and recap the past few days.

Monday

Monday was pretty straight forward– these are the highlights.

Later Monday night, I chilled with the boys and watched some Game of Thrones.. not the hugest fan so far! Although they did start me on episode 9, so there was a lot of confusion and catching up.

Tuesday:

Tuesday began normally enough- greek yogurt, banana, and gf flakes for breakfast {a staple lately…}. Following breakfast, I worked on setting up my new Armour39 Heart Rate Monitor.. can’t wait to tell y’all about it!

^I got my workout done early, because there were rumors of snow, and I wanted to workout before the gym closed! I was decked out in Under Armour from head to toe, except for my favorite Brooks running shoes! I had to capture it. Also, I don’t know how to color coordinate…especially with workout clothes. Don’t judge.^

^3 mile run. 9 min pace. Not speedy for you racers out there, but speedy for a novice like me! I do most of my runs at a 9:40-10:00 pace, so it felt awesome to really push myself and rock it for a shorter run. I think I’m going to start doing “faster” runs on Tuesdays and then slower on Thursdays to save up for my long run on Saturday. Unless I’m doing my long run on Sunday. So, we’ll see.^

^26 more minutes on the Elliptical… time I was waiting for the boy to come pick me up, so I didn’t have to walk outside in the freezing/snowy weather.^

Lunch was eaten dining hall style with my roommates and the boy. Salad, and chips + hummus. Simple, delicious.

Around 3:30, we all received a text message that campus would be closing at 5 pm, due to inclement weather. At this point it was already snowing, but very lightly. So the boy ordered a pizza for himself and his roomies {because the dining services were all going to close..} and we drove to pick it up. So scary! The roads were insane, people sliding everywhere, and accidents every mile. I am so thankful that Nathan has 4 wheel drive and we were alright. I was shocked though, and am praying for the people who were in accidents, injured, or affected in any way by the storm. The south is just not prepared for this kind of thing.

I doodled around my apartment for a while, doing some ‘homework’ aka watching TV and playing on Pinterest. Finally, at 9:30, we received a text that classes were cancelled for Wednesday. Snow day!!! My first full one in 3 years at Furman.

Paleo Recipes, and guilty pleasure TV.

My Sunday morning started off bright and early. I woke up about 7 am, unintentionally. I wasn’t mad, but I was a little sad I didn’t sleep more. Oh well, just got to roll with the punches!

In my early morning excitedness, I decided to bake something. I had 2 sweet potatoes cooked and sitting in my fridge, so I decided to use them as the base for a recipe. I loosely followed a recipe I found on pinterest, but then decided to get creative. Never a good idea. I am not a baker, not yet. My goal was just too lofty 😥 {insert sarcasm}.

I added in some pumpkin, before just deciding to add the whole can. I added some gluten free flour in as well, and more cinnamon. The other ingredients included some stevia, lots of cinnamon, egg whites, and coconut oil.

Well, if you couldn’t tell from this picture, it didn’t exactly turn out as planned. The result was delicious, but not bread consistency at all. More like.. warm pudding? I had a slice {if you can call it that} before getting ready and heading off to church with my boy.

Church was great, but by the time we got out, both of us were sufficiently starving. Neither of us had eaten much before the service, and it was 1240 by the time we sat down to eat somewhere. I had a coffee, and an “classic breakfast” with 2 scrambled eggs, 2 soysage pieces, and a side of cheese grits. The toast was eaten by NMK. Everything was so delicious. Coffee Underground is a great little place for a quick meal, dessert, coffee, anything. Check it out if you’re in the Upstate SC area!

My afternoon consisted of homework, woo! And still feeling exhausted from the run the day before.. that took a lot of time 😉

^^I whipped up a quick dinner in my apartment, with foods I already had prepared. Spaghetti squash, salmon, celery, tomato sauce, and goat cheese. Satisfyingly delicious!^^

Then, it was time for a little workout. I ran the 1 mile to the gym– it felt good to stretch out my sore legs. Then I did an easy 20 minutes on the elliptical, followed by a 1 mile incline walk on the treadmill. Then, I half ran/half walked the way back to my apartment.

^^A protein packed smoothie after my workout. Greek yogurt, almond milk, Sunwarrior Vanilla protein powder, and frozen berries. Topped with a few Ghiradelli chocolate chips {best chocolate around!} and some Mesa gluten free flakes. If I’m eating my smoothie with a spoon, I like it to have some crunch!^^

The rest of the evening consisted of a 20 minute session of yoga from Do Yoga With Me. There was an awesome feature where you can put in your yoga level, the amount of time you have, and if there is a specific type of yoga you want to do. I found a Post-Run runner’s yoga, which felt awesome on my tight + sore legs.

And to round out the night– my roommate Madi and I “did homework” while watching multiple episodes of the Kardashians AND the Bachelor wedding. So so trashy. So so good!

Free day!

Tuesday, I was lucky to have a free day- no classes. Especially now, at the beginning of the semester, this was a real treat! I didn’t have much work to do, but I did have a number of errands and organizing things to deal with.

I started my morning around 8 {my roommate had to go to an 8:30 so… I woke up. It happens.} I read a little and played around, before making some breakfast. Another similar bowl- banana, greek yogurt, and gluten free cereal. With some peanut butter this time, to make it a little more lasting.

After breakfast, I went for a quick workout, after stopping by the Post Office. Oh, the perks of living on a campus- everything is so close together.

 ^My workout was the biking around campus + two 20 minute stints on the Arc Trainer. I love it, and I feel like I can challenge myself when I do use it. I love a good leg burning workout.^

After the workout I showered, threw on some clothes quickly, and headed off for a date with my boy. It took me a long time to find the right place, but I finally did. We went to Saffron, an Indian Restaurant, which features a buffet for lunch. I had lots of amazing food, none of which I can tell you the names.. I’m not quite Indian-versed enough for that yet. It hit the spot! I have been craving Indian food all winter and finally satisfied that with a simple and healthy meal!

My afternoon was spent doing some homework, meeting up with friends, and having an important talk to my boyfriend. Just being with friends can be the best thing in the world.

After dinner, I went off for a Bible Study with some great girls. We just caught up, chatted, and planned out our study for the semester. Nothing better than fellowship with Christian girls!

One last day//Back to School.

Saturday was my last day home, and mostly spent with family. I woke up late, and just in time to head off to brunch with my mom and my best friend Krista. We went to Toast, a local restaurant with delicious, unique, amazing food! I had a Downport Omelette with egg whites which had gouda cheese, peppers, tomatoes, and  crab meat. It was amazing. I am loving seafood more and more. I might be branching out to more meats soon– like turkey or chicken!

I spent the morning/afternoon just hanging out with my parents and enjoying our time together.

A little later in the afternoon, my mama wanted to take a nap, and my dad needed to run some errands. So I headed off for a quick workout, and to use the last day of my gym pass! I hopped on the arc for a simple workout, 50 minutes of cardio.

After my workout, I headed home and cooked dinner with the fam. Salmon, blue corn chips, roasted carrots, asparagus, butternut squash, and hummus. So good. And so satisfying!

The rest of the evening was spent organizing whatever things I left in my room, while hanging with my mom and ad. It was such a perfect way to end my break. I love being home, and I love my family so much!

Sunday:

Sunday morning started early. My dad and I had to leave the house at 4:30 am to get to the airport early enough for my 6:10 am flight. Getting through security was kind of a hassle, because they opened my bag and took everything out! Obviously there was nothing in there, so it was fine, and in the end I am glad to know that they are doing their jobs! My first flight was on the tiniest little plane- we actually had to walk out to the plane and up its little stairs. Fun experience!

Around 7:45 am, I arrived in Washington D.C., and had 2 hours to kill before my connecting flight. I was practically ready to eat my phone by this point, so I headed off in search of some more socially-acceptable food. I ended up with some plain Chobani yogurt, and a packet of Keenwah granola. I had never heard of Keenwah before, but I am so glad I found it. It is a gluten free granola, made from quinoa. It was the perfect addition to my yogurt! It can be hard to find gluten free foods on the go, and it was awesome to run into this. Check out Keenwah for some delicious treats!

My lovely roommate picked me up from the airport and I took her out to lunch as a thank you. We went to Everyday Organic, a local favorite of mine. I had a TLT {Tempeh-Lettuce-Tomato} on spelt bread, which is low-gluten. It was amazing, as per the usual.  If you’re in Upstate SC, definitely check it out!

The rest of the afternoon was spent catching up with the roommates, unpacking, and even a workout. After unpacking for a few hours, I was practically going stir-crazy, so I though a workout was in order.

I had dinner and caught up with some friends, before heading out to the airport to pick up the boy. It is great to be back and I am excited to see what this semester brings!

 

Snow and Modge Podge.

Yesterday morning, we woke up to… 10 inches of snow! And it was still coming down. By 10 am it had stopped and we now have a solid 13 inches around our house. Snow is awesome, I love it. Especially the powdery kind like this. It’s light, fluffy, and oh so fun to play with. The part I don’t love…. the freezing temps. It’s been under 10 degrees since yesterday morning. Right now its finally a balmy 17! This little South Carolina girl hasn’t been in 17 degree weather since…. maybe my senior year of high school? This winter is coming for me… but I’ll be back in warm SC weather a week from now. I think I can last until then!

I was so happy to find out that Kind makes awesome gluten free granola. Since going {mostly} gluten free because of my Hashimoto’s, I have been missing my granola and yogurt bowls. I just love that crunch! Huge shout out to Kind for being an awesome, wholesome company!

After getting some work done, I headed into our basement to plow through some circuits. I got the workouts from Sarah’s book, “Get Skinny Again”. I loved how simple the moves were, and the circuit style. They were formatted to be done at home and considering we were stuck inside, that was perfect. Also- irony. I watched Cupcake Wars while working out…

Lunch was simple, some roasted butternut squash, goat cheese, mixed nuts, and balsamic on lettuce. Followed by some straight up romaine leaves dipped in hummus. Because, that salad was not as filling as I thought. I love crunch lettuce as a dipping device… less guilt that chips and let’s be real, all I really care about is maximum hummus leverage ;).

Afternoon activities: crafting and hanging out with my mom. I am making collage letters for all my roommates and it is so fun! Luckily we already have a huge collection of already cut out magazine words/pictures {thanks Mom!}. Nothing better than crafting on a snowy day!

^A little later, I had a last snack of greek yogurt and trail mix. Just cashews, almonds and cranberries. I know dried cranberries aren’t the best {added sugar} but in the past I would always go for the most chocolate-laden trail mix and pretend it was healthy… so small changes! #Lean14^

After heading up to my room for the night {my mom fell asleep on the couch…all that crafting!} I did another 10 minutes of a circuit while watching Pretty Little Liars. I started earlier this fall and have slowly been catching up on Netflix. It gets crazier with every episode!

gluten free pumpkin bread {with chobani}

This afternoon I was getting bored studying.. so I decided to use up some frozen pumpkin {from before my beach weekend} and a container of greek yogurt I had around. It turned out quite well! I actually got the idea for using greek yogurt from Elise at the Hungry Hungry Hippie with her “chocolate cherry quick bread”. This is a variation of her original recipe!

I didn’t have any Pam on hand, so I went with some butter– more natural anyway!

Recipe- Gluten Free Pumpkin Bread

  • 2 cups oat flour {with certified gluten free oats}
  • 2 tsp baking powder
  • 2 tbsp cinnamon
  • 1 container of Chobani Vanilla Greek Yogurt {16 oz.//1 lb}
  • ~1/2 cup {~7.5 oz pureed pumpkin}

–Mix in the dry ingredients together. Then, add in the yogurt, followed by the pumpkin. Mix all together

–Bake in the oven at 375 for 35-45 minutes {until a knife comes out clean}

This recipe turned out really well! I didn’t add any sweeteners {of course there were already some in the yogurt}. It turned out a little on the ‘healthy’ tasting side, but definitely still good! Enjoy!
