Thanksgiving day adventures!

Thanksgiving morning started off nice & relaxed around here. How could it not with a view like this:

After enjoying a walk with my mom, and some eggs + fruit for breakfast, we settled in to watch the BEST parade of the year! One year, my family actually went to the parade, and it was a great experience. I have to confirm though, watching under blankets with coffee and food… much better!

Surprisingly we got a little busy throughout the day and didn’t actually get to watch the whole parade. But one thing I know for sure– when Santa comes though at the end of that parade, Christmas season has officially begun!!

Dinner wasn’t until 6:30, so mid-afternoon, I snuck a workout in, and I felt great. 3 mile run + 30 minutes of strength training. Have to keep those legs strong for running.

After a snack and shower, we piled into the car to head off to Grandma Vivi’s (my Uncle’s amazing  mom who had us all over) for the big Thanksgiving meal.

Dinner was traditional Grandma Vivi, but not 100% typical for every family. I was so happy because I could eat everything except the rolls and the desserts- not too shabby. Overall, it was a pretty ‘light’ version of a Thanksgiving meal, but just as delicious. The best of both worlds I would say.

We arrived home a few hours later after lots of conversation and laughter, and promptly all collapsed into our cozy beds!

WIAW- eating at home.

Today’s WIAW is filled with quick and simple eats that I have been making during these study days. Being at home can sometimes make healthy eating difficult. The snacks are right in the cabinet and eating is more fun than studying any day! But I don’t want to be snacking away all day, and missing out on filling, nutritious meals. One way I avoid this is by making a dish, then putting everything away before I start eating. It’s easy to keep snacking away when the jar of almond butter or the bag of chips is sitting on the counter.

^^Oats, almond milk, banana, cinnamon, and almond butter. The lazy girl’s bowl of oatmeal. I just let it all sit for a minute, to soften the oats, but I didn’t actually cook them. It’s too hot for that nonsense anyway!^^

The afternoon was spent studying. Then, I ran to the gym and did some weights, Arc, and stretching there. Then, my mom picked me up and we headed to dinner together. She was gone all weekend, so it was good to catch up.

The rest of the evening consisted of studying, studying, and a glass of white wine. Not too shabby for a Tuesday.

How do you keep from snacking when you’re at home all day?

Healthy & Quick- study day eats.

It’s major crunch time for me here at school. But that doesn’t mean I want my nutrition to suffer. Im not going to lie, this week will probably include more chocolate, snacks, and way more caffeine than I normally like, but I’m not going to beat myself up. Whatever keeps me sane.

One thing I do know though, is if I eat unhealthy foods and pass up my normal vegetables + fruits, I’ll reach my test days feeling tired, cranky, and mentally weak. Good foods truly fuel my studying and I need to keep on track with that!

Breakfast

Yesterday morning started off with a simple, easy breakfast. Udi’s Gluten-Free Toast, with almond butter (that looks like a little animal!). On the side I ate some frozen fruit. This breakfast didn’t take away from my study/packing time, but it did leave me satisfied and fueled for a morning of work

A few hours later, I walked over to campus. I really do love the 1 mile walk. It’s a great break and it forces me to get some time outside, on days when I would normally be locked away studying all day.

For lunch: a “falafel salad” (minus falafel + chicken) from our campus restaurant. Simple and delicious. I love a huge salad to fuel my studying. All those vegetables are great brain power! Plus cheese + chicken give it more staying power. Proteins and fats are even more important than the carbs, so I try to include some in every meal I eat.

Studying took up the next 1.5 hours, and then my workout. I hopped on the treadmill and did an easy 3.18 mile run. After that, I was still feeling pretty good, so I hopped on the Arc trainer for another 30 minutes of sweatin’. Working out is truly my de-stresser, and it re-energizes me when I know I have to go back and stare at a computer for the next hours.

As a nice treat, on of our Health Sciences professors organized a “Study Day Recharge” in the library. Healthy snacks, yoga, and a much needed relaxation. I grabbed a few snacks to much on while studying. Green smoothie, homemade hummus + veggies, and a few local strawberries. Don’t mind if I do 🙂

After another hour or so of work, I headed to the dining hall and grabbed this monster salad to-go. The boy got Thai takeout, but I wanted to save my money for a friend’s birthday dinner tonight. Plus I know I usually eat more rice than I intend to and that just weighs me down energy-wise. This salad + some blue corn chips I had in my apartment did the trick.

I spent the rest of the night with my boy, working on our recommendation-letter requests and watching the coolest Disocvery Channel shows- Marooned and Dual Survival. Who says you can’t be productive and have fun at the same time!

 This week has been awesome. Busy, but awesome. I have had a lot of work to do in preparation for my trip this weekend. I’m leaving this morning for Orlando, and my half marathon! I cannot wait to share that experience with all of you!

Workouts:

Workouts this week were simple– Tuesday and Wednesday I went on some interval runs, to get my legs moving and in race mode! Yesterday, I stuck with a class 40 minutes on the Arc Trainer, just an easy stretch out. I’m hoping to get a workout in at the hotel tonight, but we’ll see where the day takes us!

^^All dressed up, nowhere to go. Actually, this was the last semi-chilly day we had this week {and it still got up to 65 midday.} The temperatures have been around 70 all week. Unreal! And now I’m off to Florida. One lucky girl!^^

^^I had a big interview yesterday, which is part of the reason this week has been so crazy! I get so nervous for these sort of things. I went with simple, all black, and a blue sweater for a little pop. I will hear back in a couple of weeks, so keep your fingers crossed for me!!^^

And now- I am off to throw a couple more things into my suitcase and head off to the airport! I am so excited for this weekend. My first half marathon is almost here!

Hurts So Good.

Ah, Sundays. For me that usually means church, active rest//light workout days, and lots lots lots of homework {which I’ve usually put off all week/weekend..}. This Sunday, I started my day off with a simple breakfast– banana, greek yogurt, and some trail mix. A little healthier today, since my trail mix didn’t include any M&Ms {disclaimer: that is because I ate all those m&ms yesterday ;)}.

Then, I headed off to the gym to get a workout in. The 1 mile walk to the gym was a nice warmup. At the gym, I biked for 10 minutes, before hopping on the Elliptical for a 30 minute stint. My legs were definitely sore from that 12 miler yesterday, but this workout stretched them out. It hurt so good!

Sunday night was spent studying and trying not to stress over my Español examen Monday morning. Dinner was a mix– tilapia, bell pepper, onions, spinach, lettuce, and goat cheese. Basically all the leftovers I had sitting around! Followed up by some popcorn. Just the way I like to study 😉

Monday:

Monday morning started off early early. I woke up at 6:20 {guess I was nervous about my test!}, and studied for a few hours before whipping up something to eat. Greek yogurt, an apple, Cascadian Farms Cinnamon Raisin granola, and some cinnamon on top! Perfect healthy breakfast before a test day!

My first class was so long and so boring I practically fell asleep. #sorrynotsorry.. Physics just isn’t my thing!

Then it was more study study study and some lunch.

I went with a jumbo salad again! This is pretty much my classic Dining Hall meal– there aren’t many healthy options there, so I stick to what works. I don’t mind– this combination is pretty delicious! I used to nom hard on the pita chips, but now that I am gluten free, I can’t. Oh well.. probably healthier anyway ;)!

The test went well! It was long, but I am glad to be done with it. I always feel like the first test is the hardest– I don’t know what to expect, or what the professor’s style will be. But, once you get past that first hurdle, you have a better idea of how to study!

The afternoon was spent in the lab. Some days it’s the MOST interesting and I get a ton done. Yesterday, was not one of those days. I spent 2 hours trying to get a system to work. Oh well, they can’t all be fun days!

My workout was simple, because my little legs were still sore from Saturday. I hopped on the Elliptical for 10 minutes, before a treadmill freed up. Then I did a 30 minute HIIT workout on the treadmill. I ran 6.5-6.7 at a 0% incline, and then every .1-.2 miles, I increased the incline from 1-4%, and increased the speed. It felt awesome, and I definitely pushed myself harder than I normally do on the treadmill. I love a workout that changes it up and challenges me!

For dinner, I ate at the Dining Hall again– Chili and chips + hummus for me.

Then it was 6-9 pm of my MCAT class. Not the most fun night, but hey, it’ll pay off when I’m taking that test in May!

Saturday, Run Day!

Doesn’t exactly have the same ring as “Sunday Runday”..but hey! That’s what I’ve got 😉

Yesterday was my long run– actually my last one before my half marathon. My morning was spent making breakfast for the boy + myself, doing some studying, and getting ready for the run. Breakfast was so yummy even if it wasn’t the healthiest! Trail mix and greek yogurt + some more trail mix and almond butter before I headed out to run.

The run was absolutely gorgeous. It was 55-60 degrees out, and felt so so awesome. I haven’t been able to do a lot of my runs outside {because of cold//rain}, so it felt good to get this one done on the road. I am lucky to have the beautiful Swamp Rabbit Trail right behind our campus, so I just headed out there and barely had to think, except for crossing the streets. It was fun to see all the other people out too! It makes me even more excited for race day, when all the other people are around and the adrenaline will be pumping.

After the run, I showered, relaxed, stretched, ate {trail mix + chips and salsa} and drank lots lots lots of water.

I spent the rest of the evening cleaning {and procrastinating homework} and organizing my room. It felt so good to look through the boxes {and boxes…} of stuff I have under my bed. I love to throw things out//give things away! I even moved my bookcases and rearranged my decorations. It was a BIG Saturday night over here ;).

Hey y’all! It’s been a few days! Things are crazy here. For the South at least. It started Tuesday afternoon, with snow, then a snow day Wednesday, and now..it’s Thursday morning and a balmy 17 degrees out. Oof! This New York girl has gone week, and this weather is too cold for me! Anywho.. let’s back up and recap the past few days.

Monday

Monday was pretty straight forward– these are the highlights.

Later Monday night, I chilled with the boys and watched some Game of Thrones.. not the hugest fan so far! Although they did start me on episode 9, so there was a lot of confusion and catching up.

Tuesday:

Tuesday began normally enough- greek yogurt, banana, and gf flakes for breakfast {a staple lately…}. Following breakfast, I worked on setting up my new Armour39 Heart Rate Monitor.. can’t wait to tell y’all about it!

^I got my workout done early, because there were rumors of snow, and I wanted to workout before the gym closed! I was decked out in Under Armour from head to toe, except for my favorite Brooks running shoes! I had to capture it. Also, I don’t know how to color coordinate…especially with workout clothes. Don’t judge.^

^3 mile run. 9 min pace. Not speedy for you racers out there, but speedy for a novice like me! I do most of my runs at a 9:40-10:00 pace, so it felt awesome to really push myself and rock it for a shorter run. I think I’m going to start doing “faster” runs on Tuesdays and then slower on Thursdays to save up for my long run on Saturday. Unless I’m doing my long run on Sunday. So, we’ll see.^

^26 more minutes on the Elliptical… time I was waiting for the boy to come pick me up, so I didn’t have to walk outside in the freezing/snowy weather.^

Lunch was eaten dining hall style with my roommates and the boy. Salad, and chips + hummus. Simple, delicious.

Around 3:30, we all received a text message that campus would be closing at 5 pm, due to inclement weather. At this point it was already snowing, but very lightly. So the boy ordered a pizza for himself and his roomies {because the dining services were all going to close..} and we drove to pick it up. So scary! The roads were insane, people sliding everywhere, and accidents every mile. I am so thankful that Nathan has 4 wheel drive and we were alright. I was shocked though, and am praying for the people who were in accidents, injured, or affected in any way by the storm. The south is just not prepared for this kind of thing.

I doodled around my apartment for a while, doing some ‘homework’ aka watching TV and playing on Pinterest. Finally, at 9:30, we received a text that classes were cancelled for Wednesday. Snow day!!! My first full one in 3 years at Furman.

On Friday morning, I woke up 2 hours before class and studied/finished up some last minute homework. It’s nice to have a 9:30 class because it’s just late enough that I can have 30 min-1 hour {depending on when I wake up} to cook, blog, or do any homework I haven’t finished.

^Lunch was eaten in the Dining Hall– salad, followed by some fruit, greek yogurt and cereal. It was pretty delicious, especially because I was starving by the time I ate it. I think I need to get some bigger breakfasts in..^

My afternoon was toiled away in the Research Lab, working on our video, and learning how to use all the fancy lab tools. I am so excited to start our real research this coming week!

After finishing up in the lab, I headed over to the gym for a quick workout- 35 minutes on the Arc Trainer and 20 on the Elliptical

A quick shower and change later, and we were all off to dinner. My roommate’s boyfriend is in town so a whole group on us went out to Whole Foods and noshed hard on their salad bar. I love getting anything I want– I usually get a bite of almost everything- how could you resist?

Saturday:

On Saturday morning, I woke up much earlier than I had planned, but I just rolled with it. I worked on emails and such for a while, before putting on some Downton Abbey and starting breakfast.

^I made pancakes for myself and the boy. Whole wheat. It was a little experiment for my gluten free life. The boy has been reading some things about how processed gluten is what really usually bothers people , as opposed to more natural foods like whole wheat flour, or just the plain grains. I used whole wheat flour, and ate a couple of them. I didn’t feel too bad afterward, but I don’t know if I necessarily felt amazing.^

A little homework, and some cleaning, then it was off to the gym for the 10 mile run! I usually do my long runs on Sundays, but I wanted to get it done for the weekend, especially because I have a lot of homework that I need to be working on today.

Unfortunately, because of the cold {freezing} weather I had to run inside. Ugh! I plan to do most of my runs outside for the last month of training, but I just hope it warms up a bit! I stopped about halfway to refill my water, and go to the bathroom. Then restarted for the rest of the run. I wasn’t running fast by any means. It’s so odd to me how one run can be great {like my 9.5 last weekend}

My amazing boyfriend showed up and ended up running the last 2.5 miles next to me. It was such a treat, and great encouragement to have him there smiling, and telling me that I could do it! I was also texting my mom the entire time.. she always makes me feel better!

After my run, I headed back and ate a banana, and chugged lots of water. I did laundry, and then proceeded to lay on my bed until I began to feel nauseous. I realized that I hadn’t really refueled after my run, and that was probably why. I drank some water + Nuun and ate another banana + some trail mix. After laying down a little more, I felt much better. I’m upset with myself that I didn’t refuel better!

The rest of the evening was Mexican food {I had tilapia, and LOTS of chips + salsa, plus the rice + beans from NMK’s fajitas. Score!}, and then hanging and playing games with the friends. We played Head’s Up {Ellen Degeneres’ App!} and then just talked. I headed to bed around midnight.

 

Vegetables and too many classes.

Thursday morning started off early, with breakfast and reading before my 8:30 lab. One of my classes this semester is a Health Sciences independent study, so I need to spend ~12 hours in the lab a week to count as my “class time”. It’s definitely a lot, but I love my HSC research, so I don’t mind the time requirement.

For breakfast, I decided to eat some whole, healthy foods. Sweet potato, and spaghetti squash. Both were already cooked, so I only had to heat them up. Convenient and delicious. I added some hummus and carrots for a satisfying and vegetable-filled breakfast.

My hours in the lab were spent filming and compiling a video. We filmed the layout of the lab, and different tests that were being conducted. It was a bit tedious, but it will be exciting when we get our finished project on the lab website!

Right after lab, I headed into the gym {conveniently right next to our lab} and took a BodyFit class. It was a weight training class, and this time we focused on arms + abs, with a few lunges mixed in. I have been meaning to incorporate more strength training in my schedule, but it has been hard with all the half marathon training. The class felt great, and I am definitely feeling it in my arms, my core, and my backside today!

After that, I had lunch with a friend. I was starving by this point..oops. Pointer- don’t do a 12:30 class when you haven’t eaten since 8 am. My bad. I’ll have to bring a snack next time!

The rest of the afternoon was spent doing homework. First on campus, and then in my apartment. My wonderful boyfriend actually came and picked my up so I didn’t have to walk the 1 mile back in the cold. I love to walk, but I hate to be in the cold.

After working on Spanish and Physics for a few hours, I headed back to the gym. My schedule was to run 4.5 miles today, but because of the workout class I had already done, and my legs feeling more tired than usual, I only ran 2 miles. 17:51 minutes. Faster than I normally run- I was proud of myself!

Following the run, I went to a yoga class that I had promised to attend. My boy was going, and one of his fraternity brothers was teaching the class. It felt great, but it was definitely a little more difficult than I thought I would be. I expected stretches and mediation, but it was a little heavier on warrior poses {hello quads!}, chaturungas {basically a pushup}, and strength moves. Hence– why I am a little sore today….

Yoga was immediately followed by dinner with my boy, and his little + big. It was so fun. Also– big news y’all! I had chicken. I’ve mentioned a little bit before about how I have begun to eat some fish since becoming gluten free. Well, over winter break I had chicken in a salad. It wasn’t really a conscious decision- I just ordered the salad and forgot to get the chicken taken off. Well, last night I had some grilled chicken, and it wasn’t half bad! I guess my conversion is becoming more and more real.  Sweet potato fries on the side. Classic + delicious.

I had Bible Study after dinner, and ended up staying and chatting for ~2 hours with all the wonderful girls. It is so great to have good friends, who love Christ and want to share their journey with Him.
