a valentine’s day full of joy.

Valentine’s Day. It can be such a cliché, but I don’t care! It’s such a fun day, whether you’re celebrating with your girls or your significant other– live it up 🙂

My valentine’s day started early with a walk around campus, having some ‘me’ time.

After the boy finally woke up and meandered over, I threw together a quick breakfast from random stuff I had in the fridge. Eggs + bacon for him. Bacon, chicken + salad for her.

The morning/afternoon were spent doing homework, getting a workout in, and running to the grocery store for Valentine’s Day supplies!

After some failed appetizers– apparently I do not know how to hard boil eggs– we headed out around campus to snap some photos. We have had this activity on our bucket list for a while, and considering we’re seniors, it was about time! We stopped by the lake, the chapel, the library, and the bell tower, and had a blast!

Then it was time for the main course! First up: the boy came up with this delicious idea: some frozen berries pureed + champagne = bubbly heaven.

For our main course: chicken and vegetable red curry. We actually took on the challenge and made the sauce ourselves (well we used a paste, but it’s still more steps than buying the sauce in a bottle) with coconut milk, and it was yum. I’m lucky my best friend is willing to try new recipes for me! He’s clearly the more domestic one 😉

After dinner, we took a break from eating and built a fort. We used sheets, blankets, candles, and sleeping bags for the full fort effect 🙂

Next up: dessert time! Another recipe my boyfriend was willing to try for his weird ‘healthy’ girlfriend. Paleo molten lava cakes for two from Taylor Made it Paleo. Topped with a little salted caramel ice cream, this was divine.

4: Explain the story behind your blog name

Eat, Pray, Work It Out: some of the things I love in life. I named my blog after things I love in life.

Eat: I love food! I struggled with an eating disorder for a few years, and that experience made me even more determined that now, in the prime of my life, I will enjoy the food around me in a healthy way (mentally & physically).

Work It Out: working out is a key part of my life. It is my stress relief, my fun, a way to meet new friends, and something I truly enjoy doing almost every day.

Pray: The center of my life, my faith. My faith keeps me grounded, joyful, and living for Christ. Without it, I wouldn’t have any drive to live a healthy life and to inspire others to do the same.

Together these three things represent the parts of my life that I want to share on this blog!

 

5: Top five favorite movies

I am actually not the biggest movie person. I mean, I love them! But my attention span doesn’t always lend itself well to sitting in a movie theater. That being said, these movies aren’t the most original, but they are the movies that on any day, any time, I would watch, no matter what.

taking on the hot weather.

For us New Yorkers, the weather lately has been all over the place. Last weekend it barely made it to 50° but the past few days we’ve been pushing 90°! What the heck New York…

Yesterday I started the morning off nice and early with a walk with a new puppy! The puppy was our friend’s, and the cutest little golden lab! I’ll have to take a picture of him the next time we’re together.

Then a quick breakfast…a repeat of my delicious protein smoothie!

Then my sister and I headed off to see a new movie, Frances Ha. It’s about a cute & quirky girl, living in NYC, and evolving in her friendships, in life, and in herself. It definitely wasn’t what I was expecting, but it was good. I would recommend it to anyone looking for a nice movie as a respite from the heat!

The rest of the day was pretty relaxed, cleaning and organizing things around the house. All in all a good, renewing Saturday!
