a day of food.. and chocolate.

Morning! How are you all doing? I am having just the most excellent Wednesday. Yesterday afternoon, right as I was finishing up my HIIT session, my dearest, beloved Mom walked into the gym, to my complete surprise! Yay! So my next few days will be full of love and fun! I am a total mama’s girl//my mom is my best friend… if you couldn’t tell.

So without further ado (I’m actually off to walk with mom herself as I finish up this post), here’s a recap of my eats in a day (Tuesday as it happens.)

Tuesday: My morning started off with a little sip of coffee before I headed out for a 50 minute walk. It was misting the whole time but luckily the rain held off until a little after I arrived back home.

I started my morning off with my “hydration station”. 1/2 the coffee was drank before my morning walk. After the walk I had the rest of my coffee, a little apple cider vinegar + water, and a giant glass of water with lemon.

Breakfast followed: sauerkraut, 2 scrambled eggs,with broccoli, peppers, and cauliflower.

Thirty minute later, I realized breakfast wasn’t going to last me all morning, so I sliced up an organic gala apple and enjoyed it with some almond butter.

Breakfast held me through my classes (even if the classes made me sleepy…) and I finally arrived at lunch for a satisfying meal.

Afternoon snack (to fuel the studying!): 86% dark chocolate. snap, crackle, give me that chocolate! I think I’m an addict. I might be ok with it 😉

My workout for the day was a 30 minute HIIT workout on the treadmill. 30 seconds sprint, 1 minute walk. Repeat. Feel like a (sweaty) beast.

After my workout I still had over an hour until dinner and I needed a little refuel: chocolate chips (Enjoy Life dairy + soy free) with some raw almonds. More chocolate.. what can I say!

Dinner enjoyed with my mom and a club meeting: salad with all the veggies, topped with salmon that I brought from home (because I am a nutrition nerd.)

And there you have it– my eats for a typical day! Sometimes more, sometimes less, but always chocolate. It’s the best.

snow day eats: bacon and chocolate.

Monday night into Tuesday, we had a sleet/ice/rain storm. the streets were sheets of ice, all the cars were covered, and woo classes were cancelled!

My Tuesday started off a little tumultuously. Long story short, the boyfriend came down (quickly) with a nasty stomach bug//food poisoning of some sort. He started to get really dehydrated in a scary way (fingers/legs cramping up), and despite the icy roads, another friend and I decided to head to the ER with him. I am so glad that we did, and he is doing okay now, but it was  scary/long night. We didn’t arrive back until 3 am, and the driving was extremely slow to stay safe (no complaints here).

Despite getting back so late, I woke up around 8 and could not get back to sleep. {It might have had to do with sleeping on the floor in a sleeping bag to make sure the boy didn’t need to go back to the hospital}.

I watched the highlights of the Bachelor, did some reading, and mostly relaxed because my brain was not fully functioning. I finally got around to eating breakfast around 10:40, which is unheard of for me!

Mid-morning to mid-afternoon was spent getting intermittent work done but mostly caring for my sick boy. When the roads seemed clear enough, we ventured out to get the usual stomach bug supplies and the prescriptions that we received at the hospital last night. It was slow going, but no problem to drive the ~1.5 miles to the store and back.

^^a little later, I headed to the gym. I was tired of being inside all day. the 1 mile walk to the gym + a HIIT workout on the treadmill + arc trainer certainly did the trick.^^

Another hour of trying to get work done… it was a struggle! Between the snow day mentality and the tired brain, it just wasn’t going.

^^dinner in two parts: apple salad. this was basically eaten for the sole purpose of getting that delicious Honeycrisp into my dinner! apple, cucumber, lettuce, and a drizzle of Apple Cider Vinegar.^^

after dinner I also enjoyed a square of 85% dark chocolate, it hit the spot! It’s amazing how 85% chocolate used to be way too bitter for me, but now it has the perfect amount of sweetness!

After a coffee and some water I started my morning with a 30 minute walk. It’s the best way to wake up! I love that movement first thing, and the fresh air is amazing. When i arrived back in my apartment, I talked to my parents (always a treat) and worked on homework.

After boring homework and laundry, the boy finally came over (he likes to sleep in…. one way we are definitely not similar). We went out for a late breakfast at Tandem – a coffeehouse and creperie. Coffee for her, latte for him. Tomato soup and cheese crepe for him, mediterranean (egg, feta, tomatoes, and spinach) crepe for her. It was a beautiful morning (let’s be real– it was almost afternoon at this point) to sit outside and enjoy each other’s company.

During the afternoon I grabbed some groceries, cooked for the week (paleo pumpkin bread #yesplease). Then I headed to the gym and walked on the treadmill while I watched an hour long documentary for class. I loved being able to move and get work done at the same time– there’s nothing worse than being stuck at my desk/staring at my computer all day.

Some snacks included chocolate chips, a banana + almond butter, and some carrots + salsa. Weekend meals are always a little less structured for me, especially because of the late breakfasts.

Before I headed off to lead Youth Group, I packed a quick dinner of Dubliner cheese, Applegate Farms pepperoni, spinach, and a sweet potato + Kerrygold buttah. Quick, easy, and incredibly delicious.

After I arrived home, I was pretty hungry so I had some 85% dark chocolate topped with almond butter.

All in all a successful and delicious weekend day 🙂

lately.

This weekend was the perfect mix of homework, work, and fun time with friends. After finishing a big test this morning, I am back to focusing on ‘long term’ projects for the semester, and my applications. First, though, I wanted to stop by and share some recents eats & my new workout schedule with you guys!

^I made some more paleo pumpkin bread, and it’s delicious. with 1 fried egg and some spaghetti squash. And coffee. Always coffee.^

^my simplest breakfast. 2(+) ingredient pancake. Banana, egg and the optional additions of cinnamon, vanilla, maybe nuts? I usually keep it simple and just top this with almond butter.^

^lunches during a busy week mean trying to pack a lot of nutrition + energy into one quick meal. this salad was a mountain of veggies, topped with harbored eggs, blue cheese, craisins, and some chips + salsa to finish it off.^

^my roommates and I went on a date to Coffee to a Tea, a local coffee shop that focuses on all natural ingredients. I’ve been there twice now and besides having delicious coffee, their baked goods are spectacular– not to mention the extensive gluten free options they have– basically, heaven. Above^^ is the gluten free pumpkin spice cake that we split. Not only was the cake amazing, but they magically made the icing take so pumpkin-y. If you are local, you HAVE to go there!^

Workout Updates:

In the past ~3 weeks, the boy and I have began semi-training for a half marathon. I say ‘semi’ because we haven’t actually signed up for a race- we are doing about 2 months of building up mileage first before we commit to all the travel/race fees etc. It’s been fun so far, and I can’t wait to see how it goes.

WIAW: college dining & busy days.

Morning! It’s already Wednesday and I can’t wait for Friday  This weekend is our ‘fall break’ (just a mini-break with no class Monday&Tuesday) and I have big plans… getting supplemental applications done and finally re-organizing my room! Plus some fun activities thrown in with my roommate. It’s going to be the perfect combination of work + rest.

^^dining hall lunch. on a busy day (Tuesdays are especially busy for me!) I am so thankful for on-campus dining options. Although it can be difficult to find healthy options, you can certainly do it if you don’t mind eating the same thing most of the time. for me, it’s a salad with a little feta, some balsamic vinegar and chips. the chips aren’t the *best* option, but if I go for just a salad, i’ll be hungry an hour later! i also grabbed some grilled chicken to eat on the side.^^

^after running around campus to class, lab, ‘mock interviews’ (practice for Med School), and a club meeting, i couldn’t wait to grab some dinner.  my boy and I stopped by The Paddock, our campus restaurant. It’s kind of a burger place, with some other options like sandwiches, salads, and wings thrown in. i grabbed the falafel salad but replaced the falafel with chicken. It was simple and delicious, just what I needed after a long day.^

So.. the MCAT has come and gone! I am so glad to have conquered that test. This week I’m starting my job, my research, and me Medical School applications.

I wanted to share some fun and food from the past week.

^^Fish and banana? Why not. Eggs and salad? Sure. Breakfast doesn’t have to be sugary cereal. These breakfasts were perfect for my busy week, because they allowed me to get some protein and vegetables in before I set in on studying for the day. That’s the brain power I needed!^^

Lunches of salads: more veggies and lots of delicious combinations. For a busy week like last week was, I like to grab some chopped lettuce, some fresh spinach, salsa + pre-made guacamole. Add in some chopped cucumber + bell peppers, and some fish for protein. Easy throw together salads for lunch- ready in 5 minutes!

^^It was so hot this past week! And it’s only going to get hotter… One afternoon the boy and I decided to run over to YoMo and get a treat. It was a fun little escape!^^

^^I kept the workout pretty simple last week. mostly they consisted of a short walk in the early morning to start my day. In the afternoons I either did a short HIIT workout, or walked on the treadmill while doing flashcards for the MCAT.^^

A little snippet from a morning walk: the cutest little family of ducks you ever did see. I love getting out in the early morning, when it’s still quiet. I feel connected to nature, and really connected to God during this time. It’s a time before the stress of the day clouds my perspective and steals my attention.

WIAW- eating at home.

Today’s WIAW is filled with quick and simple eats that I have been making during these study days. Being at home can sometimes make healthy eating difficult. The snacks are right in the cabinet and eating is more fun than studying any day! But I don’t want to be snacking away all day, and missing out on filling, nutritious meals. One way I avoid this is by making a dish, then putting everything away before I start eating. It’s easy to keep snacking away when the jar of almond butter or the bag of chips is sitting on the counter.

The afternoon was spent studying. Then, I ran to the gym and did some weights, Arc, and stretching there. Then, my mom picked me up and we headed to dinner together. She was gone all weekend, so it was good to catch up.

The rest of the evening consisted of studying, studying, and a glass of white wine. Not too shabby for a Tuesday.

How do you keep from snacking when you’re at home all day?

Healthy & Quick- study day eats.

It’s major crunch time for me here at school. But that doesn’t mean I want my nutrition to suffer. Im not going to lie, this week will probably include more chocolate, snacks, and way more caffeine than I normally like, but I’m not going to beat myself up. Whatever keeps me sane.

One thing I do know though, is if I eat unhealthy foods and pass up my normal vegetables + fruits, I’ll reach my test days feeling tired, cranky, and mentally weak. Good foods truly fuel my studying and I need to keep on track with that!

Breakfast

Yesterday morning started off with a simple, easy breakfast. Udi’s Gluten-Free Toast, with almond butter (that looks like a little animal!). On the side I ate some frozen fruit. This breakfast didn’t take away from my study/packing time, but it did leave me satisfied and fueled for a morning of work

A few hours later, I walked over to campus. I really do love the 1 mile walk. It’s a great break and it forces me to get some time outside, on days when I would normally be locked away studying all day.

For lunch: a “falafel salad” (minus falafel + chicken) from our campus restaurant. Simple and delicious. I love a huge salad to fuel my studying. All those vegetables are great brain power! Plus cheese + chicken give it more staying power. Proteins and fats are even more important than the carbs, so I try to include some in every meal I eat.

Studying took up the next 1.5 hours, and then my workout. I hopped on the treadmill and did an easy 3.18 mile run. After that, I was still feeling pretty good, so I hopped on the Arc trainer for another 30 minutes of sweatin’. Working out is truly my de-stresser, and it re-energizes me when I know I have to go back and stare at a computer for the next hours.

As a nice treat, on of our Health Sciences professors organized a “Study Day Recharge” in the library. Healthy snacks, yoga, and a much needed relaxation. I grabbed a few snacks to much on while studying. Green smoothie, homemade hummus + veggies, and a few local strawberries. Don’t mind if I do 🙂

After another hour or so of work, I headed to the dining hall and grabbed this monster salad to-go. The boy got Thai takeout, but I wanted to save my money for a friend’s birthday dinner tonight. Plus I know I usually eat more rice than I intend to and that just weighs me down energy-wise. This salad + some blue corn chips I had in my apartment did the trick.

I spent the rest of the night with my boy, working on our recommendation-letter requests and watching the coolest Disocvery Channel shows- Marooned and Dual Survival. Who says you can’t be productive and have fun at the same time!

How do you stay healthy during stressful weeks?

New Orleans is pretty cool: Days 1 +2

Friday morning, I was up bright and early to head off to New Orleans. Easter 2014- New Orleans with my Dad and brother. My amazing twin is a Marine in the Marine Corps Band of New Orleans (1 of 10 in the country).

That meant an early morning on Friday, I was up and at ’em. I headed over to the gym around 5:30…only to find out they weren’t opening till 8 because of the holiday. No problem though, I headed back and did a circuit workout in my apartment. Quick &sweaty, just what I wanted!

These knees made it a little more challenging. Guess I haven’t quite learned to walk yet. Or I got attacked by a bear. But probably the first one.

I had a quick breakfast and then headed off to the airport. IMG_5095My layover was pretty short, but I enjoyed a quick walk around the airport to stretch my legs. Once I arrived in New Orleans, I met up with my Dad, rented a car, and we headed off to explore. The night was simple, catching up with my brother, walking around the park, enjoying each other’s company!

Saturday morning, we were up and moving early, off to see my brother perform at the Crescent City Classic 10K.

The race went right in front of the St. Louis Catherdral and Jackson Square, two iconic parts of the New Orleans French Quarter.

My dad and I watched for about an hour as the brass band (and my awesome brother) performed. I was lucky enough to be serenaded by the Marines as their “Guest of Honor”- it was so sweet!

After the race, and the clean up, we picked my brother up from his base and headed back downtown to grab some lunch. I was practically starved by this point and happy for any food at all. We went to a little restaurant in the French Quarter and it was great.

I had blackened chicken on a greek salad, and I braved some of the crawfish appetizer we ordered. We also had some Fried Green Tomatoes, a southern staple!

The rest of our afternoon was spent exploring New Orleans and just taking in the gorgeous weather, and each other’s company.

Unfortunately, my brother had to head back to base early evening to pack up a few more instruments for the band’s big trip the next day. My dad and I used the time to go for a long walk around the base (and look at all the big planes) before relaxing in our room a little. I did a circuit workout, and it felt great to move a little.

For dinner, we just headed to a local place in Belle Chasse and enjoyed some Mexican food. Salad + shrimp- don’t mind if I do!

To finish off the night, we practiced taking selfies… or just taught my Dad about them. It was a great night, only dimmed by the fact that my twin had to leave the next morning!

A Week’s Work

What a crazy week. Luckily this one will be my last super busy week before my finals. I have my last big Physics test and my final presentation for my Independent Study this week. Then, this weekend is my boy’s formal down in Charleston. Lots to do- healthy food, good workouts, and organization is the best way to get through!

Here are my eats and workouts from this week!

Eats:

Homemade chicken, quinoa, and pesto from NMK. He made me a belated birthday dinner. I am one lucky 21 year old!

Pecan-encrusted chicken salad. I went out with my roommate and her mom, and we all got the same thing. No regrets, this was the best chicken salad I’ve ever had.

Tuesday: A partner circuit with my roommate and an easy 20 minute cool down on the Arc Trainer. The partner circuit was no joke and almost killed us. In the best way!

Wednesday: Simple Arc Trainer workout. Busy days call for easy workouts!

Saturday: A treadmill run and an outdoor circuit with my boy. But I didn’t account for the hot weather, and almost passed out. I am not ready for summer workouts!
