Healthy & Quick- study day eats.

It’s major crunch time for me here at school. But that doesn’t mean I want my nutrition to suffer. Im not going to lie, this week will probably include more chocolate, snacks, and way more caffeine than I normally like, but I’m not going to beat myself up. Whatever keeps me sane.

One thing I do know though, is if I eat unhealthy foods and pass up my normal vegetables + fruits, I’ll reach my test days feeling tired, cranky, and mentally weak. Good foods truly fuel my studying and I need to keep on track with that!

Breakfast

Yesterday morning started off with a simple, easy breakfast. Udi’s Gluten-Free Toast, with almond butter (that looks like a little animal!). On the side I ate some frozen fruit. This breakfast didn’t take away from my study/packing time, but it did leave me satisfied and fueled for a morning of work

A few hours later, I walked over to campus. I really do love the 1 mile walk. It’s a great break and it forces me to get some time outside, on days when I would normally be locked away studying all day.

For lunch: a “falafel salad” (minus falafel + chicken) from our campus restaurant. Simple and delicious. I love a huge salad to fuel my studying. All those vegetables are great brain power! Plus cheese + chicken give it more staying power. Proteins and fats are even more important than the carbs, so I try to include some in every meal I eat.

Studying took up the next 1.5 hours, and then my workout. I hopped on the treadmill and did an easy 3.18 mile run. After that, I was still feeling pretty good, so I hopped on the Arc trainer for another 30 minutes of sweatin’. Working out is truly my de-stresser, and it re-energizes me when I know I have to go back and stare at a computer for the next hours.

As a nice treat, on of our Health Sciences professors organized a “Study Day Recharge” in the library. Healthy snacks, yoga, and a much needed relaxation. I grabbed a few snacks to much on while studying. Green smoothie, homemade hummus + veggies, and a few local strawberries. Don’t mind if I do ūüôā

After another hour or so of work, I headed to the dining hall and grabbed this monster salad to-go. The boy got Thai takeout, but I wanted to save my money for a friend’s birthday dinner tonight. Plus I know I usually¬†eat more rice than I intend to and that just weighs me down energy-wise. This salad + some blue corn chips I had in my apartment did the trick.

I spent the rest of the night with my boy, working on our recommendation-letter requests and watching the coolest Disocvery Channel shows- Marooned and Dual Survival. Who says you can’t be productive and have fun at the same time!

Week in Reivew + Weekend Adventures {to come!}

¬†This week has been awesome. Busy, but awesome. I have had a lot of work to do in preparation for my trip this weekend. I’m leaving this morning for Orlando, and my half marathon! I cannot wait to share that experience with all of you!

Workouts:

Workouts this week were simple– Tuesday and Wednesday I went on some interval runs, to get my legs moving and in race mode! Yesterday, I stuck with a class 40 minutes on the Arc Trainer, just an easy stretch out. I’m hoping to get a workout in at the hotel tonight, but we’ll see where the day takes us!

^^All dressed up, nowhere to go. Actually, this was the last semi-chilly day we had this week {and it still got up to 65 midday.} The temperatures have been around 70 all week. Unreal! And now I’m off to Florida. One lucky girl!^^

^^I had a big interview yesterday, which is part of the reason this week has been so crazy! I get so nervous for these sort of things. I went with simple, all black, and a blue sweater for a little pop. I will hear back in a couple of weeks, so keep your fingers crossed for me!!^^

And now- I am off to throw a couple more things into my suitcase and head off to the airport! I am so excited for this weekend. My first half marathon is almost here!

Snow Week- eats and activities.

This week has been¬†insane.¬†It started snowing on Tuesday and continued through Wednesday and Thursday. School was cancelled on Wednesday, Thursday, and most of Friday {enough that I didn’t have any class!} The crazy thing is that yesterday afternoon, it warmed up so much {50+ degrees} that nearly all the snow + ice melted. It was a week of relaxation and play. A little too much fun, a little too little work… oh well! Now it’s Saturday and time to catch up on all the homework/MCAT studying I missed this week!

Workouts:

Despite the snow, the gym was open {for limited hours} all week. Score! It was nice to get out of my apartment and move each day! I also went on a long walk with a friend or my boy each day. There is nothing like some fresh, cold air to liven you up!

Tuesday- 15 minutes biking, 30 minute on the Arc .

Wednesday- 50 minute Arc HIIT workout.

Thursday- 5 minute bike warmup, 15 minutes on the Elliptical, 30 minutes on the Arc.

I can’t even make it one full day! Even if it is freezing outside, I have to get out and move.

The little runner that could.

On Friday morning, I woke up 2 hours before class and studied/finished up some last minute homework. It’s nice to have a 9:30 class because it’s just late enough that I can have 30 min-1 hour {depending on when I wake up} to cook, blog, or do any homework I haven’t finished.

^Lunch was eaten in the Dining Hall– salad, followed by some fruit, greek yogurt and cereal. It was pretty delicious, especially because I was starving by the time I ate it. I think I need to get some bigger breakfasts in..^

My afternoon was toiled away in the Research Lab, working on our video, and learning how to use all the fancy lab tools. I am so excited to start our real research this coming week!

After finishing up in the lab, I headed over to the gym for a quick workout- 35 minutes on the Arc Trainer and 20 on the Elliptical

A quick shower and change later, and we were all off to dinner. My roommate’s boyfriend is in town so a whole group on us went out to Whole Foods and noshed hard on their salad bar. I love getting anything I want– I usually get a bite of almost everything- how could you resist?

Saturday:

On Saturday morning, I woke up much earlier than I had planned, but I just rolled with it. I worked on emails and such for a while, before putting on some Downton Abbey and starting breakfast.

^I made pancakes for myself and the boy. Whole wheat. It was a little experiment for my gluten free life. The boy has been reading some things about how processed gluten is what really usually bothers people , as opposed to more natural foods like whole wheat flour, or just the plain grains. I used whole wheat flour, and ate a couple of them. I didn’t feel too bad afterward, but I don’t know if I necessarily felt amazing.^

A little homework, and some cleaning, then it was off to the gym for the 10 mile run! I usually do my long runs on Sundays, but I wanted to get it done for the weekend, especially because I have a lot of homework that I need to be working on today.

Unfortunately, because of the cold {freezing} weather I had to run inside. Ugh! I plan to do most of my runs outside for the last month of training, but I just hope it warms up a bit!¬†I stopped about halfway to refill my water, and go to the bathroom. Then restarted for the rest of the run. I wasn’t running fast by any means. It’s so odd to me how one run can be great {like my 9.5 last weekend}

My amazing boyfriend showed up and ended up running the last 2.5 miles next to me. It was such a treat, and great encouragement to have him there smiling, and telling me that I could do it! I was also texting my mom the entire time.. she always makes me feel better!

After my run, I headed back and ate a banana, and chugged lots of water. I did laundry, and then proceeded to lay on my bed until I began to feel nauseous. I realized that I hadn’t really refueled after my run, and that was probably why. I drank some water + Nuun and ate another banana + some trail mix. After laying down a little more, I felt much better. I’m upset with myself that I didn’t refuel better!

The rest of the evening was Mexican food {I had tilapia, and LOTS of chips + salsa, plus the rice + beans from NMK’s fajitas. Score!}, and then hanging and playing games with the friends. We played Head’s Up {Ellen Degeneres’ App!} and then just talked. I headed to bed around midnight.

 

Wednesday, Workday.

Yesterday was a pretty insane day for me. I woke up around 6:45 to get things started. My morning included some reading, getting ready, plenty of coffee {my true love}, driving the boy to his class, and then eating breakfast before heading to my first class of the day.

It was colder yesterday morning than it’s been since I got back to Greenville. 28 degrees when I was walking to class. And even colder this morning… I have become such a baby… but when I’m home in NY I’m more mentally prepared for the cold. Here in Greenville, I walk out of my apartment expecting at least 45 every morning… and when it’s colder than that, it’s just a total shock to my system.

I bundled up to the best of my Southern abilities. I also had about 40 pounds of¬†ish¬†weighing me down. I wasn’t going back to my apartment until ~930 pm {12 hours later} and I needed workout clothes, lots of books, sneakers, etc…

Despite the cold, the walk was still beautiful. I am so lucky to go to a gorgeous school, and I need to take more time to appreciate it.

^I met a friend for lunch in the dining hall. Salad bar with a side of veggies, salsa, and hummus. I pretty much get a salad every time I’m in the dining hall. What can I say- I’m a veggie girl.^

Workout:

For a simple workout, I did 30 minutes on the Arc followed by 15 minutes incline walking on the treadmill. My little legs were still pretty sore from my runs this week, and I didn’t want to push it too hard.

For dinner, I met a friend at¬†The Paddock, our on-campus restaurant. It just opened this year, and is surprisingly good. Not exactly restaurant quality, but still a step up from the Dining Hall. I had a southwestern style black bean burger– which meant salsa and guacamole. Yum! I got fries on the side…so bad, but so good! I wanted to make sure I ate a big enough dinner, because after this meal, we had to head off to a 3 hour MCAT prep class. It was the first one, and I’ll be going to these every Monday and Wednesday night. It’s going to be rough, but I need rough to make sure I’m prepared for the MCAT exam in May.

After the class, I was mentally drained and not in the mood to do more homework. I met up with my boy and some friends, and we all went out to get frozen yogurt together. I had pancakes and syrup with some cake batter. Topped with maple nut clusters, cookie dough bites, and some chocolate chips/pieces. It was so so good. I got a little else yogurt than I normally do because I was really feeling the toppings!

Monday:

On Monday we were lucky to have off from class for MLK day. It was such a treat. A lot of girls at Furman are rushing right now, so my roommates and I decided to host a brunch for all our independent friends. It turned out so well! We had cinnamon rolls, fruit salad, biscotti {from TJ Maxx– they were gluten free too! Check out Ginny Bakes for some gluten free treats :)}. Other girls who came brought some more food, and it worked out perfectly. Everyone chatted, hung out, and got to know each other better. We all usually hang out in different circles, but it was great to get to know them a little better.

After cleaning up from brunch, I stopped by the dining hall to eat/hang out with the boys. I was actually pretty hungry because I couldn’t have most of the food at the brunch- fruit and gf biscotti can only get you so far! It was fun to catch up with the guys and just hang out.

A little bit later, I headed over to my boy’s apartment to fold his laundry… yep. Normally I would be¬†totally against this- I can barely fold my own laundry without crying, but he was off doing fraternity things {it was rush weekend for them too!} so I helped him out. Either he has ¬†a lot of clothes or he doesn’t do wash very often..hm… wonder which it could be ūüėČ

My¬†workout for the day ¬†happened mid-afternoon, as a study/cleaning break. 20 minutes on the Elliptical, and 30 minutes on the Arc Trainer. Simple and easy, and the perfect stretch out from my run on Sunday. I also foam rolled for a few minutes after my workout. I really want to get a foam roller for my apartment, so I can do it when I’m just hanging out/watching TV. Any suggestions on a good brand?

Tuesday:

Yesterday morning, I woke up early to meet a friend for breakfast. Normally I sleep in on Tuesdays, but catching up with friends beats sleep any day! I headed to the dining hall and we talked for a couple of hours before deciding we should get off and be productive with our days!

^Eggs, fruit, potatoes. Gluten free, and not too shabby for a dining hall meal. I think breakfast is actually their best meal of the day!^

Around 10 am, I decided to check out the material for my Kaplan MCAT course, which starts tonight. Well… there was ~ 5 hours of diagnostic tests and 3 sections of reading to do before the class today. Oops. Needless to say, my morning and afternoon were pretty full with all that work.

After taking all the tests, I needed a mental break, so I stopped for a ¬†workout. A 4.5 mile run followed by 15 minutes on the Arc. It felt good to run, I just wish it hadn’t been so cold outside, or I would have enjoyed the sunshine + fresh air.

After my workout and some more homework, I headed off for dinner, followed by a meeting. The rest of the night was very un-eventfully spent doing homework and reviewing for my class tonight.

The class is 6-9…definitely a marathon. I am excited though, to see what it is like {and hopefully find out that it is worth the big $$ it cost}.

I can’t function if I don’t at least get a few breaks in. My favorite study breaks are going on a 10 minute walk with a friend or a 10 min run by myself. It totally wakes me up and rejuvenates me for more studying!

Weekend Warrior.

So I’m not entirely sure, but I think at college people use the term ‘weekend warrior’ for people who study hard during the week, but¬†go hard¬†on the weekends. I enjoy hanging out with friends on the weekends…but I’m definitely not someone who ‘goes hard‘. My version of weekend warrior is… working out, getting food prep done for the week, and cleaning the mess I’ve made during the week. Some may call me crazy ;). I do also enjoy using the weekends to catch up with friends who I don’t see during the week.

Saturday

On Saturday morning, I woke up¬†super¬†early- like 6 am early. I don’t know why but.. I felt really well rested, so I just rolled with it. No one else in my apartment was awake yet, so I chilled on the couch for a while, {ok I was on pinterest} before moving our table out of the way and doing a quick 10 minute circuit. It felt good to get in some movement first thing in the morning. And even better to not have to go outside to do it! I watched some Kardashians while doing my workout/chilling. Guilty pleasure TV.

^A little bit later, I sipped on some Trader Joe’s Roasted Red Pepper Tomato Soup. Kind of weird breakfast choice..but it was a nice way to get some vegetables in first thing!^

After the soup, I roasted some spaghetti squash and some sweet potatoes, before whipping up some Gluten Free Banana Bread {recipe to come!}. I obviously proceeded to snack on some of that before putting it in the fridge {so I didn’t inevitably finish off the entire thing}.

After organizing my room and doing some laundry, I ran out to grab groceries for the week + grab some decorations from TJ Maxx. I spent more than planned, but it is so fun to add cute items to our apartment! After the errands, I headed over to the gym for a little workout. I didn’t want to do anything crazy because I knew I had a long run on Sunday, and my legs were still a little sore from my circuit workout Friday. I did 50 minutes on the Arc Trainer. Have to keep that endurance up for my long runs! #halfmarathonhereIcome

After the workout, I showered, changed, and threw together a quick dinner. Spaghetti squash, green pepper, hummus, tomato sauce, and tilapia. Quick + easy. I threw an apple in my bag and ran out to go babysit.

Babysitting was so much fun. Most people at school are busy with Greek Recruitment this weekend, but I was free! My roommates are all independents as well, so we were still able to have some fun. Anyway, babysitting was great. This little nugget was too cute, and we played kitchen, matching games, and danced for a couple of hours. I put her to bed around 9 and had an hour to chill by myself before her parents came home. I don’t really love being alone in someone else’s house {hello– creepy?!} but Pinterest and Netflix kept me happy and distracted :).

After babysitting, I spent the rest of the night hanging out with my boy. We just chatted and he tried to roll a knot out of my leg! So painful but awesome- definitely helped for my run! We also snacked on some Brie and hummus. I love me some cheese.

Sunday:

Sunday morning, the boy and I headed off to church together. Church wasn’t until 11, so I had planned on getting some work done beforehand. Instead, I slept in until 9:30 and then got ready for church. Between getting ready and leaving early to get there {and pick up the boy} I didn’t have time for much breakfast, so I just grabbed a slice of my GF banana bread, and headed out the door.

By the time we got out of church at 12:30, I was pretty hungry and NMK was getting super hungry. It was real. {I kid.} We tried to go to Everyday Organic, my favorite local restaurant but they were all full, and we were not in the mood to wait. Since it was 1 pm by this time, we decided lunch fare would be acceptable. Thai food it was! I got some Red Curry with rice, which turned out to be awesome fuel for my long run!

After digesting and cleaning for about an hour, I headed over to the gym for my run. I try to run outside as often as possible, but I just wasn’t prepared for it yesterday. I don’t know.. I have to be in the right mental place- you know? I did my 9.5 miles, without stopping, and in a 9:40+ pace. I know– I’m not fast! But it felt great to get through, and I was speedy for me! I aim to finish my long runs under 10 min/mile. Nothing too crazy or ambitious for my first half! The run felt awesome, and I was so so happy! The middle miles were definitely a little boring, but I never felt like I needed to die. That’s a win!

After the run, I showered and cleaned up our apartment some. I also CHUGGED water. I filled three bottles and told myself to finish them before doing anything else. I wanted to make sure I hydrated. It makes such a difference in how I feel the next day, and I am definitely thankful for that today. I also had some greek yogurt mixed with protein powder. My muscles need that protein!

After resting for a while, my friend Sarah came over to join my roommates and I for a fun Girls’ Night! We had hummus, brie, goat cheese, guacamole, chips, crackers, and salsa. Tapas, delicious style. After chatting, painting our nails, and chowing down, we flipped on Revenge. I love love love Revenge. It is taking some crazy twists and turns this season- y’all should check it out! I am so sad it won’t be back on till March. At least I’ll have the Olympics to distract me.

A little later, we split some Half Baked¬†ice cream from Ben & Jerry’s. It was amazing. Perfect treat after that long run!

Dinner:

After babysitting, I was starved so I headed straight to our Dining Hall with some friends. On the menu: carrots/chips + hummus/salsa. Followed by a stuffed {vegetarian} pepper. Unpictured: some apple crisp that was AWESOME.

After dinner I headed to Bible Study with some great girls. Always a bright spot in my week.
