A Week’s Work

What a crazy week. Luckily this one will be my last super busy week before my finals. I have my last big Physics test and my final presentation for my Independent Study this week. Then, this weekend is my boy’s formal down in Charleston. Lots to do- healthy food, good workouts, and organization is the best way to get through!

Here are my eats and workouts from this week!


Homemade chicken, quinoa, and pesto from NMK. He made me a belated birthday dinner. I am one lucky 21 year old!


Pecan-encrusted chicken salad. I went out with my roommate and her mom, and we all got the same thing. No regrets, this was the best chicken salad I’ve ever had.


Spaghetti squash, bell pepper, and eggs + hummus. A veggie-filled start to my day.


Another vegetable-tastic breakfast. I love cooking up vegetables on Sunday and having them for quick meals during the week.


Dining Hall salads. Basically only thing I eat there. I’m not complaining about that though.






Workouts this week:

Monday: A 5:45 am bootcamp workout. SO early but lots of fun.


Tuesday: A partner circuit with my roommate and an easy 20 minute cool down on the Arc Trainer. The partner circuit was no joke and almost killed us. In the best way!

Wednesday: Simple Arc Trainer workout. Busy days call for easy workouts!


Thursday: A 5 mile run on the treadmill.


Friday: An hour of cross training on the bike.

Saturday: A treadmill run and an outdoor circuit with my boy. But I didn’t account for the hot weather, and almost passed out. I am not ready for summer workouts!

This weekend I am also extremely thankful for my opportunity to be at this school and for my amazingly supportive parents. They make it all possible!

The sun was shining, and I am feeling good!

Sundays are usually either a super busy or super relaxing day for me. This Sunday, I ended up with sort of a mix of things. I was busy, but not rushing around + doing homework like I normally am.

Sunday morning started off nice and early, at church with my favorite boy. This week was the last in their series about A Theology of Sex. Yesterday’s focus was specifically on Healing from Sexual Sin. We focused on 1 Corinthians 6:9-11. I felt like I got a lot out of the talk. After church, we headed off to the Dining Hall for a Sunday morning brunch. I went with gluten free granola, rice chex, peaches, and greek yogurt. Delicious and simple way to start the day.


The boy and I followed brunch up with episode 2 of House of Cards. OH MY GOSH. It is too good. No spoilers here, but Y’ALL if you haven’t watch HofC yet, you do not know what you’re missing. It is the most suspenseful and shocking TV show I have ever watched. And I love it for that.

For a few hours, I just worked on homework and getting all the things done that I had put off during the snow days. It was a lot more than I thought… oops! The homework went on and on, before I lost my motivation and headed out for a walk + workout. There was some lunch-esque snacking during the homework at well- chips and hummus, carrots, and lettuce I believe.


I took advantage of the beautiful day and got my walk on while I talked to my mom on the phone. We talk pretty much every day, and I wouldn’t have it any other way! Campus ^^ was looking especially beautiful in the sunshine, and it was great to get out of my apartment and enjoy some fresh air + sunshine.

My workout consisted of 30 minutes on the Arc trainer and a 1 mile incline HIIT on the treadmill. I walked at 4+ mph and put the incline between 9-12 %. It felt good to do a treadmill workout that wasn’t just a run!


^^and to finish off the night- a giant salad for dinner. Lettuce, peppers, carrots, rice, leftover fish {from Valentine’s Day}, and a little rice. It was entirely too delicious! I followed up this healthy dinner with some Ben & Jerry’s Liz Lemon Greek Frozen Yogurt. It is so good! The lavender swirl makes me swoon…^^

Snow Week- eats and activities.

This week has been insane. It started snowing on Tuesday and continued through Wednesday and Thursday. School was cancelled on Wednesday, Thursday, and most of Friday {enough that I didn’t have any class!} The crazy thing is that yesterday afternoon, it warmed up so much {50+ degrees} that nearly all the snow + ice melted. It was a week of relaxation and play. A little too much fun, a little too little work… oh well! Now it’s Saturday and time to catch up on all the homework/MCAT studying I missed this week!

^^dinner out {Thursday night}. It was so nice to finally get off campus, even if it was less than a mile away. We went to Thaicoon, and I went with Pineapple Curry, and rice. I forgot to ask for brown rice, but YOLO ;).^^


Despite the snow, the gym was open {for limited hours} all week. Score! It was nice to get out of my apartment and move each day! I also went on a long walk with a friend or my boy each day. There is nothing like some fresh, cold air to liven you up!

Tuesday- 15 minutes biking, 30 minute on the Arc .

Wednesday- 50 minute Arc HIIT workout.

Thursday- 5 minute bike warmup, 15 minutes on the Elliptical, 30 minutes on the Arc.

I can’t even make it one full day! Even if it is freezing outside, I have to get out and move.

biking adventures.

 this morning was rushed y’all! I woke up early to make breakfast for the boy {my little gesture as a good girlfriend}. Then, I ran back to my apartment, and by ran I mean biked. Showered, dressed, make up-ed and got breakfast ready all in about 30 minutes. Not to brag but…I was pretty impressed with myself. Breakfast was some quick apple cider vinegar {I mix it with a shot of all natural apple juice and some water to take down the acidity}, some coffee, and a “banana split” of greek yogurt, and kashi cereal.

After my morning classes, I biked back to the apartment {80% uphill} and whipped myself up a scrumptious lunch. I threw half a sweet sweet potato, a bell pepper, and some spinach in a pan to heat them up. I threw that on top of some romaine and added a side of hummus…yum! Followed it up with a slice of some gluten free banana bread- I couldn’t resist! After gobbling down, I threw on some cozy clothes and got to the homework grind. I definitely wasn’t in a homework mood after morning classes, but I had an afternoon date, so I wanted to get ‘er done!

A bit later, I changed again {how many outfits can I wear in a day? Challenge accepted!} into an outfit for what I thought would be a windy bike ride. I didn’t realize how warm it had gotten in the hours since I had returned to my apartment. Oops. By the time I got .5 miles away, I had to stop and take the scarf + sweater off.

On campus, I met up with a friend, and we back 5 miles while chatting away. The 30 minutes literally flew by, it was lovely. We made Swamp Rabbit Cafe our stopping point. It’s literally right off the trail. They are a grocery and a cafe- carrying awesome local goods, and crafting amazing treats and goods of all kinds {plus gluten free and vegan ones too!} Emily and I sat and chatted for a while before heading on the 5 miles back. Just about an hour bike round trip- felt awesome and the time with a great friend was extremely appreciated.

^after getting back and cleaning some, this was dinner at the dining hall. Salad with veggies, white beans, some feta, and tortilla chips for crunch.^


^After dinner I headed to the gym where I did some Arc-ing and some stairmaster-ing before heading back…and kicking the chain off my bike. Luckily I {ok my boy} was able to fix it and make it back to my apartment. I also had a great chat with my Dad after dinner, which always makes me smile.

Then I chowed on this beauty- apple, cinnamon, choc chips and some peanut butter. It was a winning combination for sure.^
