2014. Resolutions and Plans!

It’s 2014! Can you guys believe it?

In 2013 I started this little blog, and I definitely haven’t been as dedicated to it as I planned. During the school year I alternated between dedicated and slack depending on the intensity of the work load. I figured that once I got home for winter break, I would settle in and blog as much as I had been itching to. But…. there was so many activities! Family parties, friends, babysitting {hello exhausting}, and then of course Christmas with the whole family! Right after Christmas, my mom, my brother, and I drove down to Jacksonville, FL {a 15 hour drive}. I was there for a Campus Outreach conference and my brother was there to see his roommate get married! So much excitement!

So with that, here’s what I’m thinking. 2013 was the start of this little blog. I trucked along and did the best I can. For 2014 I am going to be more accountable. I want to post more, but especially post more of 1- my eats {because that’s what I promised when I started this} and 2- my thoughts, because they are cool too.

So here it is in writing. I’m sure it won’t go 100% as planned, but I’m excited for 2014 and I can’t wait to see what it will bring!

So, since I haven’t been checking in lately, I’ll give you guys some random pictures, plus my Saturday antics!

^Last dinner with my gorgeous roomie! Mahi Mahi burgers, quinoa, goat cheese, and roasted pearl onions + brussels sprouts. This was amazing. Goat cheese has a special place in my heart.^

^The last meal before I headed home from school. I went all out with fries, I live a wild life. And a black bean burger under all those vegetables.^

Saturday morning consisted of crafts, baking, and general preparations for all the Christmas gatherings we’ll be having at our house over the next few days. The funny thing is that we won’t even be here for Christmas Eve/Day, but there will be lots of activities before then.

After some work around the house in the morning, I met a friend out to get manicures and do some shopping. My color came out a lot lighter than I thought 😦 but…later I painted over with a gold color I love! I’ll post that tomorrow. Besides– the most important part of the manicure is getting them to clean up your nails, right?!

^After shopping, we stopped in at a new restaurant, Sweet ‘n’ Savory in Port Jefferson, to try their crepes. We split and Eggplant Crepe and a Berries and Creme Crepe. They were enormous and so so delicious. Anyone in the Long Island area, you HAVE to try these. You will be more than satisfied.^

^For family dinner, I wasn’t too hunger {did you see those crepes?!}, so I stuck with the vegetable sides. Spaghetti squash, roasted broccoli, and broiled asparagus. Yum!^

^And to round out the night… a workout. 30 minutes of intervals on the Elliptical, and 20 minutes of Arc intervals. Nice and sweaty, in under an hour!^

Off to the family holiday party!

After a low key night with the roomies Saturday, Sunday morning started off with lots of fun– brunch with the boy!

So…as promised, regularly scheduled posting is back in action. Here’s the last few days in review.

Thursday:

Thursday was another day of babysitting. The amazing + wonderful thing about my little kiddies is that they love love love to be outside and moving around. I hate to be cooped up inside, PLUS I really believe spending time playing outdoors is one of the best things you can do for/with children {in my NOT expert opinion}. We go for walks, play soccer, draw with chalk, and just talk. It’s deathly hot outside, but hey, at least they enjoy it!

Workout Thursday was- 1 mile {each way} jog to the gym. 25 minutes of biking, and of course… babysitting.

Friday:

^breakfast- greek yogurt, banana, and muesli from Trader Joe’s. It’s been my go to breakfast all week. Topped with a little honey? It’s divine.^

^after classes I headed to the Lazy Goat with Krista. We split some pimento cheese as an apetizer- the chunks of roasted red pepper were the perfect compliment. For my meal I had vegetable kebab on a bed of cous cous and tabouleh. Our waiter was so nice and helped me piece some things together to come up with a vegetarian lunch that was satisfying and delighting for my tastebuds.^

^rounded the meal out with some french press coffee. I find french press so much smoother than normal coffee. It goes down particularly well.^

In the afternoon I worked out- keeping it simple with 60 minutes of the Arc trainer. I definitely felt the burn!

^after a dinner out with a friend’s mom, we headed downtown for  the first party {official party} of the school year. It was hosted in Liberty Tap Room. It was ridiculous. We were all hot and sweaty, which basically means we had a fantastic time and danced the night away.^

finally it’s Saturday! Happy weekend!

a weekend for the books- part 1.

      this weekend (really Thursday-Monday) was a truly wonderful, busy, and joy filled weekend! my boy came to visit from Ohio. we’re lucky that we only have to deal with ‘long distance’ for ~2 months out of the year.. but it doesn’t make those 2 months any easier. This visit was especially great because it was the first time Nate (my boy) has visited my family/my town. I’ve already been to his house 4 times so this visit was long overdue!

due to the visit, we had action filled days and lots of pictures to share!

the boy arrived on Thursday night- an hour late, but we made it work! After an hour drive from the airport, we met my family (+1 of my best friends) at Baja Grill a local mexican restaurant that makes fresh and delicious food- plus they have plenty of healthy options. We enjoyed and chatted away- it was the perfect casual setting for everyone to get to know each other. I definitely recommend this restaurant to anyone local!

After dinner, we all headed back to my house for some amazing desserts. On top of the Jeni’s Splendid Ice Creams, we were lucky enough to have a homemade dark chocolate cake- courtesy of my sweet Mom! She used this recipe for Hershey’s “Especially Dark” Chocolate Cake and she even made the icing from scratch. Unfortunately I don’t have a good picture of the cake, but you can catch a glimpse of the dark, rich color on Nate’s plate below!

The night ended with some catching up for Nate and I, and then passing out from sheer exhaustion.

Then on Friday we were left crafting new plans unexpectedly. We had planned to go to the beach for my Ohio boy- they don’t have beaches there, and I think we have some of the best on Long Island. But the rain/cold sort of prevented that. We didn’t mind though- being creative is always fun! Instead of the beach, we headed over to a local nature preserve- Avalon Park and PreserveDSCN0423 DSCN0426

It is a really gorgeous place, and a lot larger than I realized. It’s 76 acres of wild nature (mostly- minus the trails) right in the middle of our little suburbia. I was pretty shocked and amazed.

While in the preserve we tried to geocache but after crawling under bushes and trees with no luck…we decided it wasn’t meant to be.DSCN0427 DSCN0429

then we wandered around some local towns, and I showed him what my hometown is all about. after that, it was back home to help prepare for a party that night- a party for all my friends/my family friends to meet Nate.

the party went really well, but I didn’t take any pictures for the sake of just enjoying the night!

Saturday we went into NYC and Sunday we celebrated Father’s day…a recap part 2 coming later!
