college life. it’s busy, it’s fun, it’s exhausting, all in all- I’m pretty blessed to be where I am.

 ^^morning walks this week. I’ve been able to go on a 30 minute – 1 hour walk every morning, and it is glorious. i love the movement first thing, and i love listening to a good podcast in the morning. especially some Christian wisdom.^^

favorite #1: eggs. 

let’s be real– this is a favorite pretty much every week. eggs with veggies, eggs with salsa, eggs all DAY.

What foods are you enjoying?!

WIAW: catching up!

Hey guys! Long time no..talk! It’s been a loooooooong two weeks. Tests, quizzes, papers, and more. But the real reason I haven’t been blogging is…my phone stopped working! And I honestly didn’t realize until then,  just how much easier it makes …everything. First of all, I didn’t take ANY pictures without my phone. I’m a college student, and I’m not going to carry my camera around ALL day, so I basically rely on my phone for food pictures. Second of all, I just felt more stressed/busy- everything took more planning because once I went somewhere I knew I wouldn’t be able to change the plans//contact anyone.

Anyway, long story short, my new phone finally arrived yesterday (after being sent to New York instead of South Carolina..) , and I also finished two tests so I am back to share my recent eats & activities!

^^Breakfast of the champions? Well, at least it was color coordinated. 1 egg, spaghetti squash, and a delicious slice of paleo pumpkin bread that I definitely need to give you guys the recipe for^^

^^a treat from the Dining Hall while I was studying for my tests yesterday. gf corn flakes, chocolate chips, a little greek yogurt, and peaches. you just need a treat sometimes, ya know?^^

^^One of my favorite on-campus dinners: a large salad from the ‘pden’ aka our mini food court. You get lettuce + 7 toppings, and they chop them all up. Mine was cucumber, bell pepper, turkey, parmesan cheese, strawberries, walnuts topped with red wine vinegar and olive oil.^^

^^after a long day, I was starving when I got back to my apartment. These chips– cooked in avocado oil instead of a harmful seed oil — and they happen to also be extremely delicious^^

Whole30: Day 11

Whole 30 Day 11! I can’t believe how far I am along.

Breakfast

Cauliflower rice, peppers + onions, and a few eggs. I cooked the cauliflower rice in ghee and it was on point, as usual. For the eggs, I heated the veggies in a pan first, then cooked the eggs over them.

Lunch

Prosciutto, avocado, peppers, and spaghetti squash. A delicious protein + veggie packed meal.

Snack

Berries + pistachios. This combo of sweet fruit and salty nuts is SO good.

Dinner

Another fantastic meal, cooked with the boy. Spaghetti squash (pasta for him), chicken, sauce, and amazing, amazing asparagus. This meal was so filling (that spaghetti squash has volume).

Paleo Recipes, and guilty pleasure TV.

My Sunday morning started off bright and early. I woke up about 7 am, unintentionally. I wasn’t mad, but I was a little sad I didn’t sleep more. Oh well, just got to roll with the punches!

In my early morning excitedness, I decided to bake something. I had 2 sweet potatoes cooked and sitting in my fridge, so I decided to use them as the base for a recipe. I loosely followed a recipe I found on pinterest, but then decided to get creative. Never a good idea. I am not a baker, not yet. My goal was just too lofty 😥 {insert sarcasm}.

I added in some pumpkin, before just deciding to add the whole can. I added some gluten free flour in as well, and more cinnamon. The other ingredients included some stevia, lots of cinnamon, egg whites, and coconut oil.

Well, if you couldn’t tell from this picture, it didn’t exactly turn out as planned. The result was delicious, but not bread consistency at all. More like.. warm pudding? I had a slice {if you can call it that} before getting ready and heading off to church with my boy.

Church was great, but by the time we got out, both of us were sufficiently starving. Neither of us had eaten much before the service, and it was 1240 by the time we sat down to eat somewhere. I had a coffee, and an “classic breakfast” with 2 scrambled eggs, 2 soysage pieces, and a side of cheese grits. The toast was eaten by NMK. Everything was so delicious. Coffee Underground is a great little place for a quick meal, dessert, coffee, anything. Check it out if you’re in the Upstate SC area!

My afternoon consisted of homework, woo! And still feeling exhausted from the run the day before.. that took a lot of time 😉

^^I whipped up a quick dinner in my apartment, with foods I already had prepared. Spaghetti squash, salmon, celery, tomato sauce, and goat cheese. Satisfyingly delicious!^^

Then, it was time for a little workout. I ran the 1 mile to the gym– it felt good to stretch out my sore legs. Then I did an easy 20 minutes on the elliptical, followed by a 1 mile incline walk on the treadmill. Then, I half ran/half walked the way back to my apartment.

^^A protein packed smoothie after my workout. Greek yogurt, almond milk, Sunwarrior Vanilla protein powder, and frozen berries. Topped with a few Ghiradelli chocolate chips {best chocolate around!} and some Mesa gluten free flakes. If I’m eating my smoothie with a spoon, I like it to have some crunch!^^

The rest of the evening consisted of a 20 minute session of yoga from Do Yoga With Me. There was an awesome feature where you can put in your yoga level, the amount of time you have, and if there is a specific type of yoga you want to do. I found a Post-Run runner’s yoga, which felt awesome on my tight + sore legs.

And to round out the night– my roommate Madi and I “did homework” while watching multiple episodes of the Kardashians AND the Bachelor wedding. So so trashy. So so good!

^a Perfect Protein Pancake via Fitnessista. This was so good and so easy to make. The best part– it actually formed like a pancake–fluffing up and getting that nice “crust”. I served mine with a simple apple on the side.^

^birthday dinner out for my beautiful roommate. I went with the Penne-Goat pasta– with gluten free penne. It had spinach, sun-dried tomatoes, goat cheese, and pine nuts. Delicious!^
