My Sunday morning started off bright and early. I woke up about 7 am, unintentionally. I wasn’t mad, but I was a little sad I didn’t sleep more. Oh well, just got to roll with the punches!
In my early morning excitedness, I decided to bake something. I had 2 sweet potatoes cooked and sitting in my fridge, so I decided to use them as the base for a recipe. I loosely followed a recipe I found on pinterest, but then decided to get creative. Never a good idea. I am not a baker, not yet. My goal was just too lofty 😥 {insert sarcasm}.

I added in some pumpkin, before just deciding to add the whole can. I added some gluten free flour in as well, and more cinnamon. The other ingredients included some stevia, lots of cinnamon, egg whites, and coconut oil.

Well, if you couldn’t tell from this picture, it didn’t exactly turn out as planned. The result was delicious, but not bread consistency at all. More like.. warm pudding? I had a slice {if you can call it that} before getting ready and heading off to church with my boy.

Church was great, but by the time we got out, both of us were sufficiently starving. Neither of us had eaten much before the service, and it was 1240 by the time we sat down to eat somewhere. I had a coffee, and an “classic breakfast” with 2 scrambled eggs, 2 soysage pieces, and a side of cheese grits. The toast was eaten by NMK. Everything was so delicious. My afternoon consisted of homework, woo! And still feeling exhausted from the run the day before.. that took a lot of time 😉

^^I whipped up a quick dinner in my apartment, with foods I already had prepared. Spaghetti squash, salmon, celery, tomato sauce, and goat cheese. Satisfyingly delicious!^^
Then, it was time for a little workout. I ran the 1 mile to the gym– it felt good to stretch out my sore legs. Then I did an easy 20 minutes on the elliptical, followed by a 1 mile incline walk on the treadmill. Then, I half ran/half walked the way back to my apartment.

^^A protein packed smoothie after my workout. Greek yogurt, almond milk, Sunwarrior Vanilla protein powder, and frozen berries. Topped with a few Ghiradelli chocolate chips {best chocolate around!} and some Mesa gluten free flakes. If I’m eating my smoothie with a spoon, I like it to have some crunch!^^
The rest of the evening consisted of a 20 minute session of yoga from Do Yoga With Me. There was an awesome feature where you can put in your yoga level, the amount of time you have, and if there is a specific type of yoga you want to do. I found a Post-Run runner’s yoga, which felt awesome on my tight + sore legs.
And to round out the night– my roommate Madi and I “did homework” while watching multiple episodes of the Kardashians AND the Bachelor wedding. So so trashy. So so good!
