Thinking Out Loud: Repeats.

I had so much fun sharing my Pinterest loves last week, that I decided to do it again this week as I Think Out Loud. Enjoy y’all!

1. This amazing gluten free marbled chocolate banana bread– from Robyn at The Real Life RD (awesome blog y’all should check out!). I will be making this on Day 31 of my whole30 😍.

2. Tonight my Bible Study is getting together to watch Frozen. Yep. 10 women, all over 21, having a Frozen movie night. No shame. If y’all remember, this is also what I did the night of my last birthday. I’m pretty excited!

3. I am a traveling girl at heart. Give me a road trip, a day trip, an adventure, somewhere to explore and I am in. This chart seems like something I need to do in my

5. I am taking one of my friends to workout for the first time today. In her words she wants to work “Butt and Abs”, aka what every girl wants. I’m excited to help someone new get into fitness. I hope I can show her how fun it is!

America the Beautiful

Happy (late) 4th of July y’all! I hope your Fridays were work-free and fun!

I woke up nice and early, and decided to go for a walk and have some quiet time before the festivities of the day began around campus. I passed by a 5K on my walk and felt super awkward being that person who’s walking through the race… oops! I got off their path as soon as I could.



I whipped up a random plate of goodies- 2 eggs, asparagus, and a banana with the last of my chocolate hazelnut butter 😢.


The rest of my morning was a combination of medical school applications, cleaning, and a little fun nail painting.


America. I couldn’t resist.


Lunch came a little later as a bunch of thrown together leftovers. Spaghetti squash, asparagus, tomato sauce, and some crispy bacon on top. Carrots + hummus on the side.


For a fun afternoon break from our work, I met up with the boyfriend and we finished watching The King’s Speech. It was amazing. I’m probably the last person on the planet who hadn’t seen it, but if you live under a movie rock like me, this is one movie you should venture out for!


An afternoon workout in the cool AC of my apartment was perfection. I did an hour circuit loosely following this Jillian Michael’s video on YouTube. I was sweating up a storm by the end. I repped my America shirt (space camp…. yes I’m a space camp kid ha) for the workout, I think it gave me the extra push at the end ;).

The rest of the evening was spent celebrating with my favorite boys. We started off grilling behind our apartments. Grass fed burgers, watermelon, Cape Cod chips, and the most delicious grilled corn you’ve ever tasted.



My mini burgers. The boys made fun of me, but they were perfectly cooked, ha!


For the corn, we just wrapped it up in foil and cooked it on the grill the whole time the burgers were cooking. It was sweet and melt in your mouth amazing. 

After dinner, we headed out to make our own fireworks show… the boys were loving it. We bought some fun little things and then headed over to their fraternity house to light them off.


We had a great time. The only downside were the literally hundreds of bugs that ate us up. Oh well, the sacrifices we make for fireworks, right?


To end the night… the boys had a little fun with their fire pit. Classic.


We headed back to our apartments after that and hung out with some visiting friends before calling it a night!

Real food + compression shorts in my face.

Yesterday morning started off bright and early. After a walk and a shower, I packed up my breakfast and lunch and headed over to the lab. After working a little, I was able to grab my breakfast while I read through some articles. Spinach + eggs, my latest favorite combination. Followed by banana and some chocolate hazelnut butter a la Justin’s. I was glad for the extra fat in the nut butter because the following few hours got pretty busy for us.


For 3 hours, I prepped football players for EMG and kinematic marker testing.. Not all too complicated but a lot of compression shorts in my face, and hairy legs that had to be shaved for the EMGs. Needless to say, it was not how I imagined I would be spending my morning.

Around 2 pm, we were finally able to stop for the day and eat some lunch. The next Monday, Wednesday and Fridays are going to be filled with this testing until we finish all the players, so that should be interesting. As awkward as all the prep was, it’s fun to have more people and activity in the lab for once!

Lunch: spinach, avocado, peppers, tilapia + apple.


When we wrapped up for the day, I was pretty exhausted, so I headed back to my apartment and rested for a little.

My morning was pretty active with the walk, and all the running around the lab, but I still wanted to get a little strength workout in. I decided to do a little circuit in my apartment. I did a circuit and of lunges, pushups, squats, jumping jacks, and punches with my 5 lb weights. The perfect strength session for a late afternoon pick me up.


Finally… dinner! I was so hungry by the time dinner rolled around.Luckily, it was a good one. The boy and I had a delicious “brinner” of turkey bacon, eggs, asparagus, and potato + onion hash fries. It was so good and nutritious.


And the most exciting news of yesterday…my best friend got engaged! (I did not find out via Facebook ha! She called me crying during dinner and I knew instantly). I am so happy for her and her fiancee and I can’t wait to help her plan!


That’s two friends engaged already this summer, and my cousin getting married this fall. What a joyful season!

WIAW + Burn Those Legs Circuit!

Good morning! It’s another WIAW, and mine is filled with random eats. It definitely wasn’t a typical day of eats for me, but then again, what is a ‘typical’ day? Just listening to what our bodies tell us, and that’s what my day was. Stay tuned to the bottom of this post for a circuit workout that is sure to get your legs working!

Morning: I started my day with a walk around campus, and down the swamp rabbit trail. I got off to a later start than usual, so it was unnecessarily hot, but still a nice walk.


When I got back home, I showered and then threw together a quick breakfast while getting ready. Turkey slices, apples, and almond butter. Simple and nutritious. Not exactly breakfast fare, but it did just the trick.


After breakfast, I had to drive to a meeting (at Cracker Barrel). We ended up talking for about two hours and I was getting hungry again, so I had a scrambled egg while there to tide me over.

When I finally made it home, I was pretty hungry for lunch. It was so hot out though, nothing sounded appetizing. I ended up eating a bunch of trail mix, followed by a green juice for some extra nutrition. Not a ‘typical’ lunch but.. I was went with what I was craving and it did the trick.




After working on applications for a while, I headed over to the gym and did a killer leg workout. {Details below :)!}


Dinner was a major fail. The boyfriend and I were supposed to have “Paleo Spaghetti Squash and Meatballs” for dinner, but I seriously underestimated how long meatballs take to cook (hey, I was a vegetarian for 6+ years) and didn’t leave enough time for them before I had to head off to bible study. Instead, we just had the spaghetti (whole wheat for him, squash for me) with sauce, asparagus, and goat cheese. The Trader Joe’s Vodka sauce was delicious and I highly recommend it.


Unfortunately, our little protein-lacking dinner didn’t have much staying power (in retrospect I should have realized that veggies + cheese wouldn’t, but I was in too much of a rush to worry). By the time I made it home from Bible Study, 3 hours later, my stomach was grumbling loud enough to practically have a conversation with me. It was bad, y’all.

I threw together a snack of a gala apple, some yogurt covered raisins, and some BBQ Veggie Skinniez from the Daily Crave. I picked them ups few days ago from TJMaxx and they are so good! This little plate did the trick, and I was able to nod off to sleep without eating my pillows.


Now for the Burn Baby Burn Legs + Abs Circuit!

This workout was hard but it felt awesome. I started off with a fast mile run, and then went straight into the circuit. Your legs will be sore after this one!

Well, y’all- I made it! Spring Break has finally arrived. The past week was midterms, which is always a busy & challenging time. But the reward- a week off, and maximum relaxation! This morning I’m off to Savannah, GA to enjoy a week of beach and exploration with my friends- I’ll be sure to update you all on how it is!

A Quick Recap

Morning guys! Yesterday was a lazy day, spent catching up with my amazing friend Gina. So just a short recap!


^^Breakfast was simple– sweet potato and hummus. Did the trick.^^

After breakfast,I chilled for a while before preparing a lunch spread.  Quinoa, guacamole, hummus, vegetables, lettuce, butternut squash, blue corn chips, and brie cheese. My friend Gina came over and we spent a few hours just chatting and snacking. It was bliss!

After she left, I hang out with my family for a while before having a little spaghetti squash and hummus for a dinner-ish meal. I had a big lunch so I wasn’t too hungry. I also grabbed a little trail mix for some more fats and staying power.


^A little bit later, I did a 25 minute circuit in my basement. It got me sweaty and my heart rate pumping. It was awesome! My legs are so sore today.^


^side note….yes, I did go to space camp. #noshame.^

What’s your favorite at-home workout?

Snow and Modge Podge.

Yesterday morning, we woke up to… 10 inches of snow! And it was still coming down. By 10 am it had stopped and we now have a solid 13 inches around our house. Snow is awesome, I love it. Especially the powdery kind like this. It’s light, fluffy, and oh so fun to play with. The part I don’t love…. the freezing temps. It’s been under 10 degrees since yesterday morning. Right now its finally a balmy 17! This little South Carolina girl hasn’t been in 17 degree weather since…. maybe my senior year of high school? This winter is coming for me… but I’ll be back in warm SC weather a week from now. I think I can last until then!

I was so happy to find out that Kind makes awesome gluten free granola. Since going {mostly} gluten free because of my Hashimoto’s, I have been missing my granola and yogurt bowls. I just love that crunch! Huge shout out to Kind for being an awesome, wholesome company!


After getting some work done, I headed into our basement to plow through some circuits. I got the workouts from Sarah’s book, “Get Skinny Again”. I loved how simple the moves were, and the circuit style. They were formatted to be done at home and considering we were stuck inside, that was perfect. Also- irony. I watched Cupcake Wars while working out…


Lunch was simple, some roasted butternut squash, goat cheese, mixed nuts, and balsamic on lettuce. Followed by some straight up romaine leaves dipped in hummus. Because, that salad was not as filling as I thought. I love crunch lettuce as a dipping device… less guilt that chips and let’s be real, all I really care about is maximum hummus leverage ;).


Afternoon activities: crafting and hanging out with my mom. I am making collage letters for all my roommates and it is so fun! Luckily we already have a huge collection of already cut out magazine words/pictures {thanks Mom!}. Nothing better than crafting on a snowy day!

^A little later, I had a last snack of greek yogurt and trail mix. Just cashews, almonds and cranberries. I know dried cranberries aren’t the best {added sugar} but in the past I would always go for the most chocolate-laden trail mix and pretend it was healthy… so small changes! #Lean14^

After heading up to my room for the night {my mom fell asleep on the couch…all that crafting!} I did another 10 minutes of a circuit while watching Pretty Little Liars. I started earlier this fall and have slowly been catching up on Netflix. It gets crazier with every episode!
