Gluten Free Banana Bread

Guys. A week ago, I made some delicious banana bread, that I am way overdue for sharing with y’all!

I haven’t mentioned this yet but- I’m testing out gluten free right now. Turns out that my thyroid disease {Hashimoto’s thyroiditis} is actually an autoimmune disease. And with autoimmune diseases gluten can be particularly aggravating to the condition. So for now I am trying to cut out the majority of the gluten I eat and see how that works for me. I’ll keep you all updated!

With that in mind… I made this banana bread as an easy breakfast {alternative to cereal or granola which is chock-ful of gluten}. Give it a try and let me know what you think!


^have bananas going bad? Just throw them in the freezer. Then defrost them and peel. It’s a little messy but pretty easy^

Gluten Free Banana Bread {loosely based on this recipe}

  • 2 cups gluten-free all purpose baking flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup greek yogurt
  • 1/4 cup coconut oil
  • 1/2 cup stevia baking blend**
  • 2 eggs, lightly beaten
  • 1/4 cup stevia
  • 6 ripe bananas, mashed

**with 6 bananas AND the stevia I found this bread to be pretty sweet…you may want to leave the sugar out or decrease the number of bananas

-Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 9×5 inch loaf pan.

-In a large bowl, combine flour, baking powder and salt. In a separate bowl, cream together butter and sugar. Stir in eggs, maple syrup and mashed bananas until well blended. Add the banana mixture to the flour mixture; mix until batter is just moist. Pour batter into prepared loaf pan.

-Bake in preheated oven for 20 to 30 minutes, until a toothpick inserted into center of the loaf comes out clean. If using muffin or cupcake tins, bake for 15 minutes or until a toothpick inserted into the center of a muffin comes out clean.
